This is a tough one to post as I was hoping for great as I was hungry and this food style off norm but just can’t. Plenty of jambalaya rice served volume but other ingredients like meat within seemed overshadowed. Did see small bits presumably chicken? Potato salad ok not my type as I expect a bit of sweet pickle relish flavor tang. Tried a promotional piece of fudge. At first bite the texture was very soft and had almost a spicy tobasco like bite to it. Fudge flavor? Hard for me to find it… I sampled later and aside noticed a very salty palate aftertaste odd. This is a twist of fudge I can’t say I’d eat more than one piece in a sitting and maybe just a nibble at a time it is very unusual fudge almost couldn’t eat a whole piece all at once. Salty more than fudgy. Folks working the restaurant were pleasant and I wish them well. They may be targeting a particular customer market but I may not fit that mold. I will post a 4 rating but not a 5 or 3 because I wasn’t wanting more and I’m not a jambalaya connoisseur so won’t downgrade the rating unnecessarily.

Nice little find today, small establishment with a very limited menu but if your food is this good and this affordable then you’re on to something! The jambalaya and the potato salad were both very good and the sweetest lady ever working the window. Good luck y’all, hope you last a very long time!!!

This was our second visit, the first was shortly after they opened for business. The food here is DELICIOUS and memorable, as we will always choose Yumbalaya to eat at when we come through Siloam Springs. The owner is such a sweet person. Give this place a try, you won’t regret it.

Hitting the spot for a late lunch/early supper and I decided to take a chance on Yumbalaya. It is 10/10 and I will definitely be back! Service was also so amazing which somehow makes the food taste that much better sooo I’ll bump it up to a 15/10!

Jambalaya comes in many different forms. Much like gumbo every region, every family has a different take, there’s no one “right” way to make it thou you can tell if the cook has ever been near Lafayette. Yumbalaya’s version might be best described as a fairly good tribute to this Cajun staple. The red beans and rice actually outshined their signature dish thou it has a taste similar to the Tony Chachere’s mix available in stores. That about covers the limited menu, understandable considering how tiny this food truck is.

I’m visiting town on business and I saw this restaurant near my hotel. I have a great love for jambalaya so I had to find time to try it and I was not disappointed. It was truly excellent. I got a large plate of jambalaya with potato salad. It was flavorful but not too spicy. They offer you hot sauce and other seasoning on the side to adjust the spice to your taste. On top of that they were very friendly. Overall a great experience for me. I’m not sure if I’ll be back in Siloam Springs for business anytime soon but if I am I will be returning to Yumbalaya. Keep up the excellent work.
