Established in 2011, Casa Chimayo Restaurant made a name for itself using a traditional approach along with fresh local ingredients to showcase recipes developed by grandmothers over generations. Since 2021, Chef Joaquin Quintana and his gracious wife, Benina have devoted themselves to giving guests an exceptional culinary experience in a warm, friendly atmosphere —where you will be welcomed as guests, make friends and leave as family! Located just blocks from the Plaza, this historic and humble little adobe has a lovely interior that hearkens back to abuela’s house and a cute, dog-friendly patio where you can enjoy a breeze, while sipping an Agave Margarita, or a cold local brew as you peruse the menu.

First time dining here, the food and service was outstanding. We were in a party of 20 (Santa Fe Foodies) and everyone was impressed plus, the restaurant did a great job serving this large group. The Chile En Nogada, a dish I always order when I see it, was the best I’ve ever had. Try it! The mole is also very good, unusual. Superb Flan. This is a new favorite for us.

You’ll have a problem finding a parking ️ However, the restaurant is situated at a central location which is pretty much walking distance to various hotels; the food is delicious and it does worth the effort. I had Chili Rellenos, corn, fresh guacamole, rice, and beans. My wife had a steak fajita. We were there with friends and everyone enjoyed everything. Everything was absolutely amazing. An authentic restaurant in Santa Fe. Our waiter explained and recommended dishes that were on the menu and others that were not but that they could prepare for us. Truly a 5 star waiter, he knew what he was talking about and cared that we were well served. The food is phenomenal, delicious! Upon entering, we had a choice of quaint indoor patio seating or indoors. Joaquin seated us indoors as per our preference. He was knowledgeable about all food and drinks that are served. That’s almost unheard of in this day of servers/restauranteurs. We started with a sweet, red sangria and table side guacamole. Delish! Their salsa is also cleverly tasty! So many flavors in one little bowl!
