BRUTØ is located inside of Free Market on the Dairy Block of downtown Denver. The BRUTØ dining room consists of an eighteen seat chef counter that faces into our open concept kitchen. Please make a reservation to join us for a mutli course Omakase-style tasting menu dinner. Our chef counter is open for dinner Tuesday-Saturday evenings with seatings available between 5:00-8:30pm.

I found Brutø to be an exquisite and refreshing experience. While waiting to be seated we received bubblies as they were running a bit behind – nice touch. The dishes were creative, delicious, and overall I love the focus on sustainability! The menu consisted of: canapes, mushrooms + greens, uni + squash, trout + carrot, piada + corn, pork + whey, eggplant + chocolate, and rice + carrot (detailed descriptions in my attached photos!). The sourdough piada with smoked corn butter was just as amazing as all reviews mention – I definitely took one home! I also really enjoyed the canapes, pork (which is surprising, I rarely eat it), and the eggplant + chocolate which was served with green curry ice cream that I now cannot wait to have again. We also received handmade truffles with our bill. I got the non-alcoholic drink pairing which I was very impressed with. I highly recommend a drink pairing with your meal; yes, it’s an added cost but also an added element to rounding our your meal. I also love the location, in the Dairy Block – very fun. I’ll look forward to visiting Brutø again in the future!

From the moment I walked in, I felt like I was part of some private club where you have to know somebody to get in. The ambiance was dark and moody, but the service was warm and inviting. I was surprised to see that the chefs were the servers. They explained each course with passion, and a true understanding of the sourced ingredients. I’ve had plenty of tasting menus, but nothing on this culinary level. From the first course of wagyu tartare, I was hooked. Side note, I hate Kale, like really hate it, but somehow Chef Byron Gomez made me magically love it. The food is amazing, it’s actually unexplainable. It’s something you have to experience yourself. The only down side is that I’ll never get to have any of these courses again, as the menu changes often, and I won’t be back in Denver soon enough. Hopefully, I will be back for another seasonally curated experience. Thank you to the team, you guys really made me feel like I was part of this culinary journey.

It was a fantastic experience. Chef-driven tasting dinners are always a treat—and not the norm in Denver. Love the ethos and the craftsmanship in every dish. Service was perfect; just the right blend of interaction and time to savor the dishes and talk amongst ourselves.

My favorites of the 11 dishes were both trout ones, the pork, and the bread. Several of the others were too intense for me; a little fermentation goes a long way and for me it overpowered a lot of other flavors. My husband and son loved it all, though, so it’s really just preference. The wine pairing choices were novel and delicious. We took notes, but they also gave us a menu of the food and wine at the end. There are plenty of delicious-looking non-alcoholic beverage options for every course too, definitely not an afterthought.

Made for a great birthday celebration with my favorite people.

Whereas Osteria Francesca focuses on the food, and Alinea focuses on spectacle, I would say that Brutø’s strength really lies in its totally devoted customer service. The food is deservedly Michelin starred, and the atmosphere is modern, comfortable, and upscale. The service, however, is absolutely exemplary. This Chef and their team seem totally dedicated to making sure that every diner has the maximumly pleasurable personal experience possible. Comfortable and engaging, you can’t ask for a more catered experience in Michelin stars.

This was, on the whole, an excellent experience. Lovely inventive food, the drink pairing were a definite highlight (maybe a little heavy on the sake for the wine pairing), and the service was excellent and very personable. However, be prepared to pay. I’ve eaten everywhere from the French Laundry to Noma and Guy Savoy, and this competed for price with Michelin 3 Star restaurants, which I just wasn’t really expecting. Yes its labeled so I should have known, but man…$800+ for dinner and drinks in Denver? Was just a bit of sticker shock.

We went here to celebrate my husband’s birthday and thought the food and service was excellent. We read all the mixed reviews (Some loved it others hated it). We did not find any of the food salty nor the amount of food to be small. I would absolutely recommend. We sat at one of the 2 intimate tables versus the chefs table – we had requested this and were very pleased with the table.

We have been to other Michelin star restaurants and James beard award winners and I would put Bruto right up there with the rest of them.

What a wonderful experience. Two hours of refined indulgence that we couldn’t have asked for more of. The mixed drink pairings were stellar and the overall curation of every bite was incredible.

The chefs are clearly passionate about their art, and all staff were knowledgeable and approachable. Special shout out to Nora, who was especially kind and welcoming.

I can’t imagine a more delicious, satisfying experience. Going back to eating “regular” meals will be depressing now.

Took my wife here for our 21st anniversary. The food did not disappoint. The ambience was awesome. The staff was super friendly very cool environment being able to watch them work. It’s a different environment, but was awesome. I don’t typically watch chefs make my food. We had an incredible night. Definitely one of the best restaurants if not the best in Colorado.
