I had the New Frontier Bison Flank Steak and enjoyed every bite. The unique combo of red sauce with beans accompanied by medium rare bison and some small slices of goat cheese were an enjoyable experience.
The gentleman behind the bar was a retired Marine and complete professional.
I thoroughly enjoyed my time and I believe that you will too.
It was our first time here, we opted for their prefix menu, they call it “farm-to-table menu” I think.
There was a nice mix of appetizers, a reasonably sized entree and a few other amuse-bouche bites. Every dish has an interesting, yet excellent twist, with a good mix of complimentary flavors and textures. Like figs & blue cheese, fried oysters and anchovies, etc.
The short rib entrée was delicious, complimented with roasted peanuts and perfectly charred, slightly crunchy broccoli rabe.
It’s a bit useless to share specific items we had, since menu is seasonal and ever changing, but I will add pictures.
This review is directed squarely at the corporate leadership that runs Vermilion.
Unfortunately, this was the worst dining experience my party and I have ever had. From start to finish, it was a mess. The food ranged from poorly executed to outright inedible, portions were inconsistent and small, and the overall value simply wasn’t there – we left starving. The entire evening felt like an overpriced cash grab, rather than a celebration worthy of the occasion.
PS: They explicitly call out a complimentary glass of sparkling wine in their advertisements – we did not get one even after asking, having to instead order a bottle for the table on our own dime. Also, not a single gift from the kitchen throughout the meal.
Please think very carefully before booking a special event at Vermilion. In our experience, this company did not respect our time, our investment, or our trust. Until there is a serious reset in how this restaurant is run, I would strongly recommend avoiding it for any important occasion.
