The Fredonia Hotel’s newly opened Republic Steakhouse is the ultimate East Texas fine dining experience that carries an elegant and intimate atmosphere as well as undeniable attention to detail in every dish. The Republic whisks you away to a time when Frank Sinatra sang and Marilyn Monroe stole our hearts, but this is not Las Vegas or New York. It is right here in Nacogdoches, Texas. Open Thursday, Friday and Saturday from 5pm – 9pm, The Republic Steakhouse is a reservation only establishment. You can make reservations by calling the hotel (936) 564-1234.

We made a reservation at 7:30 P.M. on July 16th, 2022. When we got there we were arranged to sit at a table close by to the bar. We started off by drinking water. My brother tried the Manhattan, it had Vermouth, Bourbon and not sure what else, but when it came in the glass it was literally smoking in the glass and came around $12-$13. I got the New Orleans BBQ Shrimp Appetizer which was $19, which came with around 5-6 shrimp garnished with 4 pieces of garlic bread. The sauce the shrimp and garlic bread were put in had some kind of wine that really accentuated the flavor of the shrimp. It paired quite nicely. My brother got the Lobster Bisque and it was definitely worth the price for it. It would probably be nice to go back just to enjoy the soup to be honest. We then had a main course of 8 oz Center Steak Filets that came at around $48 each; I got it medium well, and my brother got it medium, and it was one of the tenderest steaks I’ve ever tried in my life. Finally to finish off, even though we stayed a little past closing time, we ate a Luxardo Cheesecake that was very well presented. My brother and I enjoyed every minute of it. The atmosphere of the place wafted with the hints of classy jazz you could take a special someone to. A great place to talk business, for a 3rd date (to take it up a notch), or to get your wife in the mood. Our waitress was wonderful, had an exciting and positive vibe, and knew what she was doing. Because my brother and I work a lot, it is very hard for us to find time for vacations (he has PTO and I don’t), so we felt this was the best way to spend our time this year for the summer. It is definitely a beautiful experience and hopefully I get to enjoy something similar to it again before I meet my heavenly maker. I want to thank the Fredonia Hotel and the Republic of Fredonia Steakhouse for a great night out of the house and for taking the time to care.

Had a great time, atmosphere was awesome and the server was on point. Food was really beyond what we expected. Emily our server was very proper and sweet and the server assistant Chloe was very attentive also hostess was so kind. I highly recommend this place !!

Went for an early Valentines date. The drinks were excellent, as always. Service and food was some of the best in Nacogdoches. I recommend the banana fosters cake. It was a nice end to a great meal.

The Republic Steakhouse is a GREAT place to eat in Nacogdoches. Nicest meal you can get in Nacogdoches, and the staff treats you with personalized care. On top of the food, the staff was very sweet and made sure I was happy.

The wife and I went out on yet another outing. This time to our local steakhouse which neither of us have been to. It. Was. Amazing! First off we had a wonderful server named Megan who was extremely knowledgeable and guided us through the menu. We started off with martinis which were really good and only needed one. I had the lobster bisque and she had the BLT chopped salad before ordering the 8oz filet and butter shrimp pasta. For the little town of Nacogdoches Tx we were very impressed. We had a nice private table near the window. We really needed a romantic night out and this place really hit it out of the park.

The Republic Steakhouse risks their local reputation with poor service. Our reservation for two couples made weeks in advance and confirmed again on the afternoon of our planned time together for 7:00 was met with disarray. No water service, incomplete flatware, no table bread (though some tables around us were served these same expected basics), delayed greeting by the wait staff, and 30 minutes for ordered wine to reach the table on a night where only 1/3 of the tables were occupied and there were no large groups. We pre-ordered both our appetizers AND side dishes with our drink orders, ordered our main entrees when drinks came to the table and the kitchen failed to deliver any of these items hot. My wife’s entree was delayed by 25 minutes (and I waited to eat with her) when the chef came to the table to say it was “a bit overcooked and the” replacement entree would be on the table in “five minutes”. My wife expressed that she would be happy with the crispy item to be delivered immediately. Twenty minutes later, a cold plate with a cold entree came with apologies from the table staff that they were sorry about not getting her order placed originally and for their delay in recognizing who the dish was intended for when it was finally prepared. The chef returned to see if we had enjoyed our meal before my wife had taken her first bite; we all found him intrusive and clueless about our cold food. Now, it was 8:45 and the heat was turned off and the staff was noisily moving tables and vacuuming. We were not offered a dessert menu, and our bill was brought to the table. My wife’s meal was billed in full. I paid the full 20% tip and we said nothing to our young waitress about the multiple failures given that she was clearly undertrained.
