Everyone loves sushi, but few know the culinary delight dates back almost 2000 years. Well before refrigeration, Japanese fisherfolk preserved fish by wrapping it in fermented rice and salt, calling it “Narezushi.” Kept in darkened storerooms, Narezushi was perfected over the centuries until now, when modern sushi has been elevated to an art form. Soko, the latest sushi restaurant at Fairmont Miramar Hotel & Bungalows, is a literal tribute to the origins of sushi. The name “Soko” means “storeroom,” and Soko is, in fact, set in a simple storeroom on our main-floor lobby. Born and raised in Hakodate, Hokkaido Japan, Sushi Chef Masa Shimakawa delivers a Master Class in refined technique, presentation, and quality.

I was staying in the fairmont and visited soko sushi on my first night in town. The fish was amazing quality and the menu had a great variety of choices both omakase and a La carte. I got the bluefin tuna platter and the toro was incredible and it was a lot of food. Masa and Donna were a pleasure to chat with and they guided me through the menu. The sushi bar environment was very intimate and enjoyable. I definitely recommend!

Omg, what a place!!!! This is the best restaurant in SM by a long mile! The food is just too good to be true! I’m thrilled I finally found a legit sushi place in SM. The service is also outstanding, as I was waiting for a table at the nearest bar they even come to get me saying that your table is ready. Like never, I had experienced such special treatment from start to finish. Wow, just wow! Special thanks to Charlotte, Donna, Masa, and Kei. A truly Michelene star team! The only thing I wish I could get is a beer for chefs. That’s just a tradition! Sending love to this gem!

Amazing!! Fish is very authentic, most are imported from Japan and the service was top notch. The price was very reasonable too as I’m used to paying >$150 per person for good sushi. I’m coming back for sure. My wife and I both loved it.

This new pop up from Chef Masa is a must try. Located inside the Fairmont Miramar hotel, it is top-quality sushi in an intimate, 8-seat setting. The blue fin tuna platter is the must, then pick your favorite fish because it’s all fantastic!

What a gem, my husband and I checked into the Fairmont hotel and I noticed this cute sushi spot at the corner of my eye. We were starving and let me tell you, what an experience. Its cute, small, quant sushi bar/dining. We were greeted by Angel, and guided us through the menu selections. The service was on point, clean and the sushi OMG comes from Japan. All we can say was wow!! to every dish we ate. Also, Brian was super sweet and educated us on each sake paring we ate with our meal. Thank you Soko team for making our first day so special. Brian, Angel, Masa & Kei keep up the amazing work and art you present in your sushi dishes.
