Nestled in the San Juan range of the Rocky mountains in historic Rico, CO, Prospector is a 40 seat chef-driven restaurant PLUS catering in the Telluride, CO area. Chef O’Hara is the former Executive Sous Chef at the world famous Hotel Bel-Air in Los Angeles, California, where he had the privilege of working with the world renown Wolfgang Puck. He now brings his experience and critical acclaim to the diners of Rico and Telluride.

I have no words. I eat out a lot, I’ve lived in a lot of different places, I’ve loved abroad and several places in the US and this is the best meal I’ve ever had, hands down. This is better than Michelin star meals I’ve had. I eat vegan, and they had a whole vegan menu of options for me. The waitress was the best, so adorable, just so kind. I cannot wait to come back and bring family and friends.

In the journey of life, you come across people who take an incredible amount of pride in their craft. Chef Eamonn O’Hara is one of them. My family and I dine at the Prospector at least three times a year, and it is an incredible experience each time. It starts with the garlic in oil with bread, followed by the corn bisque, chicken, beef filet and salmon. But, the chicken is my favorite. I have never tasted chicken so good. The wine and cocktail menu is very good, and the desserts are the perfecting ending to a great evening. The service is at a leisurely pace, so plan on about 2 1/2 to 3 hours. It’s an experience, and worth your time.

My husband and I came here based on great reviews. It was in a very small remote town. We loved that and the fact that is was close to where we were camping. Some of the food was delicious, some not so much. We had the corn chowder soup and bread wirh roasted garlic. That was very good. I ordered the steak med well. Was well done and burnt on ends. A but disappointed in that. Husband’s salmon was good. Waitress was very nice, good service. Got soup right away. Our main course didnt come for almost an hour later. Ambiance cute but could have been better for what was expected.

Very special food experience. Chef Eamonn is a true gourmet chef and amazingly can perform at a very high level all by himself. The results are, with a few choices at each course, you will have every item cooked and prepared with perfection.

What an exceptionally lovely meal, from the wonderful bread with roasted garlic, to a generous and lightly dressed salad, to the scrumptious and cooked-to-perfection chicken and mash with vegetables, all enjoyed in a simple but comfortable surrounding with gorgeous views, and warm, friendly service! Would recommend every day and twice on Sundays! We will be back with friends!

The chef worked for Wolfgang Puck years ago and that attention to detail is obvious. He was doing every job the night we were there and it was impressive to watch. Highly recommend this gem hidden away in a tiny town.

Must stop at this road-side rustic yet elegant menu. Yes, the side of the building says “Argentine Grille,” but this location is the Prospector restaurant. We had the artichoke dip, half chicken and crab cake. It’s incredible to find a restaurant of this quality in the middle of the Colorado mountains. Take the beautiful winding road to this small Colorado mountain town.

Okay, so now I know why all of the previous 16 reviews are five-star reviews. Admittedly, I was a little suspect before I ate here, but now I understand. This is one of those restaurants where there are four or five main entrees on the one page menu. And of course, all five of them likely blow you away. I had the salmon and it was outstanding. While I was eating here I discovered that everyone else in the room I was eating with frequent this restaurant because it is so good (the chef’s also a well-respected veteran professional). So yes, all of the five star reviews were legit, definitely worth checking out!

For such a small this place does a very tasty hamburger. They’re mostly limited to carry out during covid. I’m typically not a fan of fried potatoes instead of french fries but the garlic sauce on the hamburger pulled it together for me. I’ll definitely have to try them again the next time I’m in Rico!
