Unbelievable! Every single thing we had was perfection. It was so good on our first visit, we made a reservation to return two days later!

Chef Eamonn is a one-man operation, which makes it feel like you’ve been invited into his home. Sit back and enjoy your time, and appreciate that no corners will be cut in the kitchen.

The homemade bread served with some of the plates is alone worth the visit. All the plates are small, so it’s easy to try everything.

The salmon is to die for and the creamy chocolate cake will leave you wanting more.

If I lived here, I’d be a regular!

I have no words. I eat out a lot, I’ve lived in a lot of different places, I’ve lived abroad and several places in the US and this is the best meal I’ve ever had, hands down. This is better than Michelin star meals I’ve had. I eat vegan, and they had a whole vegan menu of options for me. The waitress was the best, so adorable, just so kind. I cannot wait to come back and bring family and friends.

Must stop at this road-side rustic yet elegant menu. Yes, the side of the building says “Argentine Grille,” but this location is the Prospector restaurant. We had the artichoke dip, half chicken and crab cake. It’s incredible to find a restaurant of this quality in the middle of the Colorado mountains. Take the beautiful winding road to this small Colorado mountain town.

Okay, so now I know why all of the previous 16 reviews are five-star reviews. Admittedly, I was a little suspect before I ate here, but now I understand. This is one of those restaurants where there are four or five main entrees on the one page menu. And of course, all five of them likely blow you away. I had the salmon and it was outstanding. While I was eating here I discovered that everyone else in the room I was eating with frequent this restaurant because it is so good (the chef’s also a well-respected veteran professional). So yes, all of the five star reviews were legit, definitely worth checking out!

Oh, and disregard the sign on the side of the building that says The Argentinian, or whatever. Trust the Google maps…

Stayed at attached Rico Hotel. A very real sense of mining history. Comfortable and hospitable atmosphere. The proprietor, Eamonn, was outgoing and friendly. He is an outstanding chef. Only 30 minutes outside Telluride, on a mountainside, Rico is much less a tourist trap. Stay here in the evenings and visit the trailheads for hiking. Ahhh…. so much more relaxing than the hubbub tourist morass down in the valley.

Wowzers! Lucky find while enjoying the mountains of CO. Searched google maps and Prospector showed up with great reviews. Yeah…pretty darn amazing. From the first taste of the sweet corn bisque and breads, we knew everything was going to be terrific. My chicken was wondrous, the wife’s salmon spectacular. Come to find out, the chef/big boss worked with Wolfgang Puck and the food was just awesome. Wonderful atmosphere and keep in mind, have patients…this is true 5 star/michelin style dining.

What a find in the sleepy mining town of Rico, CO! So impressed with the culinary skills of Chef Eamonn – from the homemade focaccia with roasted garlic, the mouthwatering corn bisque to the delicious crème brûlée – so good we visited twice in one week. You better check it out! Reservations required.

For such a small this place does a very tasty hamburger. They’re mostly limited to carry out during covid. I’m typically not a fan of fried potatoes instead of french fries but the garlic sauce on the hamburger pulled it together for me. I’ll definitely have to try them again the next time I’m in Rico!

Everything we ordered was wonderful!! Everyone at the table was happy and impressed with their meals. Cozy atmosphere. A gem in the adorable little mountain town of Rico.

Special thanks to the owner/chef for being so kind and accommodating about my vegan diet as well – the grilled cauliflower with tahini dressing was particularly amazing!
