Welcome to Proper Taco, Midland’s home for tacos with personality. We’re a fast-casual spot serving authentic flavors alongside plenty of unexpected ones—tacos should never be boring. Our menu features creative tacos, nachos, salads, dips, and soups made with fresh ingredients and bold flavor. Proper Taco was built on the idea that Midland needed tacos that were a little more adventurous. We make as much as possible in-house, from sauces and dips to meats and freshly cut veggies. We proudly offer vegetarian and vegan options, and nearly our entire menu is gluten- and soy-free. Enjoyed this unusual taco place with lots of gluten free and vegetarian options. Cute decor, lefty hippy vibe, yummy and some unusual tacos. Would definitely go back again. Fun merch too. Picked up a nice mug to add to my collection.

The food was great! The nachos Tom style were so fresh and tasty. Had a lime drink with it. There was only one person working and she has a great balance of taking orders and getting food out including to go orders.

All the merchandise and other cute little items for sale were fun to look at while we waited too.

I’ve had Proper Taco more than a few times now—in their Midland restaurant, catered twice, and from their food truck at an event. The food is fantastic! I loved checking out the restaurant’s merch as well— it’s a unique place that always delivers good service and delicious food.

Decent place with eclectic tacos and nachos. Got the Merv nachos w/chuck and chorizo protein, Karen taco w/spicy chicken protein and Angie w/braised pork. Nachos were spicy, but the tacos were just good. The food was decent and my husband and I really liked the tortillas they use. He said braised pork is the only protein he will choose from now on. The protein was claimed to be 3 ounces per taco, but it was more like one in my opinion. Would definitely come back to try the other menu items! This lunch was very filling and totaled $32 w/tip

Came from out of town for a show at Midland center for the arts and randomly choose a spot to grab lunch first and we couldn’t have choose a better spot! Right away felt welcome and comfortable. The food was phenomenal and we received a lot of helpful recommendations from the staff. We are now including them in our dinner date restaurants.

Cute lil place. I love how the tacos all have people names! It’s fun and the employees are very friendly and fast! There’s so much to look at too! I had fun going through the basket of pins!

The taco I ordered was very good, and it was quite drippy! I had to wrap it with a napkin to contain. I’m definitely going to go back for more!

Proper Taco is a one of a kind place. The food is extraordinary. Don’t go looking for mass market Mexican. Each taco is an amazing amalgam of flavors and textures.
Try anything on the menu, but order an Odin taco to keep in reserve. It’s cool and fresh and calms the spices on your tongue.
No buyers remorse here. Do yourself a solid and stop in for a bite!

Creative tacos, not your normal taqueria. Cute little place. The menu is a bit overwhelming, thankfully the guy gave us a menu tour which did help but it was still overwhelming. I’m glad I looked online first because I kind of knew what I wanted to get. You walk up to a counter to order. The menu is on the wall. Tbh this makes it very overwhelming with a menu that has so many options and variations it would be better done as an in hand menu. After ordering I heard the workers talking in the back about how they can’t understand how someone, even after the menu has been explained to them that they can’t figure out what to order. I can tell you right now that it is the way that the menu is presented. It’s the names and the way the ingredients are listed. Having the spicy items listed in red helped my guy order because he knew which items he wanted immediately. I on the other hand needed to read the overwhelming list of ingredients. The smell when I walked in was a bit sour and there were a few flies around the kitchen and counter area which was off putting. The flies and overwhelming menu almost made me want to leave. I ended up getting an Odin and a Becky- both were super wet with the water from the bin the chicken was pulled from. They definitely need a spoodle. Because they are not draining their scoops. My tacos were so soggy and wet that it was a mess to eat. My first bite of the Odin got all over me and the table. While the flavor and presentation were good the actuality of the taco was a disaster. The last plate photo in my post shows the liquid that came out of both my tacos. My guys tacos were different meats than mine so he didn’t have my issue. He had the moe and the Amanda. He said the moe was interesting and the Amanda was best. We had the Nathan to share which was really good. The worker never checked up on us or pre-bussed our table but did it for a family that sat next to us. This was upsetting. I was gonna talk to them about my experience but figured after hearing them talk about the customers before hand and the fact that they didn’t check up on us that they probably didn’t care. Good not great. I’d go again.
