These are the tamales I grew up on. Don’t get me wrong, the Mexican tamales we could get in SoCal were authentic and tasty in their own right but it’s apples to oranges. These are the real deal when it comes to authentic New Orleans style tamales. They have a different flavor profile altogether. Maybe it’s the nostalgia kicking in but these are the best. If I’m going to bring them all the way home to Gonzales though, I need to find a way to get some of that liquid gold their cooked in. Otherwise, they’re too dry when you want the leftovers the next day.
