I came here for restaurant week, and was impressed by how chef Angie fuses French cuisine with a Japanese twist. The umami flavors are complimenting and full-bodied, the complex textures melt with every bite. For someone who doesn’t typically appreciate foie gras, her Foie Gras “A L’Orange” takes the cake, it melts in your mouth.

There is something special about entering petite West Village restaurants on a windy and rainy night. Les Trois Chevaux makes it even more special.

complements to the chef, a tasting menu tour de force hitting all the high notes and leaving us with a sense of passion and discovery. chef angie mar masterfully creates a crescendo of emotion throughout her seven courses, with a humorous nod to familiar flavors. her take on bread and butter, done beautifully with a perfectly prepared croissant and paired delightfully with caviar. i cannot sing the praises of the salmon enough. the most unbelievably impeccable piece of fish i have ever eaten. the fireworks that were the dessert did not go unnoticed, my wife and i were floored! the waitress was attentive, funny, and knowledgeable to boot. we will be back, in spades.

Les Trois Chevaux offers a wonderful dining experience. Everything from the warm welcoming to the beautifully decorated space is special on very many different levels. The menu is diverse and includes a large variety of dishes, both meat and fish, that are both delicious and professionally served.

I was here for the restaurant week (yes, they do this only for a “week”). The deal was amazing, and the food was very tasteful. Foie Gras was my favorite and was very soft (some might find the texture too tender).

We sat at the bar and felt we had just as impeccable and delicious of a meal as everyone else. Decor was amazing. All of the staff were so gracious and attentive. It was such a nice surprise when Chef Angie came out to say hello.

This is a 5* place that almost gets there. There’s some cookery that absolutely hits the heights, the guinea fowl for example is as classic French as de Gaulle’s nose, and executed as thoroughly as marie Antoinette (yeah, ok, poor double entendre…what can I say but excuse moi). The misses are mostly human. The fingernails of the host, the convenient amnesia when we order a dish that’s sold out, or the amuse that never show. It’s the old “maybe they won’t ask” school of service that works OK in a diner, not at all in a fine dine(r). The turbot isn’t as promised (from an 8lb large fish), and the dish itself is confusing, without being problematic. But again at this level, small things count. There’s more on both sides of the ledger, but the fact is, we had a really good experience. The room is a delight, and the meal, sorry, I mean experience (why oh why have we stopped talking about meals?) is genuinely very good.

Can we talk for a minute? Please keep reading because I need to tell you about the life-altering meal I had here. I mean, I will try but honestly words do not exist to sufficiently describe the magic that is Les Trois Cheveaux. If you’re looking for a dining experience that will sweep you off your feet, look no further. Seriously, you probably shouldn’t come here with your significant other unless you’re okay with them watching you meet the new love of your life, the abalone. I’m not talking about just enjoying food I’m talking about being seduced and falling head over heels hard in love. I really don’t know how else to describe it. I started with the abalone and I swear I saw god. Just when I thought this meal couldn’t get any better I shared the pheasant for two with my friend and the consommé made me forget my name. Every dish here is like a woven tapestry of flavor and experience. The robust notes of that tapestry unfold across your palette and it’s like each thread has its own story to tell. This all comes together in an immaculate and beautifully designed space with the most incredible and attentive staff. Listen, you will catch feelings. Personal reco – the cocktails are equally prepared with artistry and perfection so make sure to try at least one while you’re here (the Française is my favorite).
