Let’s be honest. My expectations for airport food are low. But if you are going to market something as “chef so n so’s” or “bbq they smoke on site”, in the state of Texas, you need to bring your A game.

I’ll give this place 4 stars, but not on account of the food. The meal was ok, but the staff was super. It was really busy but they kept up. Most seats were taken. I’d rate this place over Cousin’s, which is a few gates down. I tried what I thought was the full rack of St. Louis ribs, which came with 8 ribs. Not sure what the definition of full rack is for them. To be fair the menu didn’t specifically say “full rack” it just implied it, and the receipt said “full ribs”. The ribs were ok. I prefer the membrane on the back of the ribs peeled prior to smoking, but to each their own. They did need the sauce, which was good. I was not a huge fan of the bacon mac and cheese. Their coleslaw is vinegar based and was ok. I did like their take on an old fashioned (bulleit). Prices are what you’d expect at the airport. I did like the sitting area they had. I’d go back.

For airport brisket, it was thick cut and juicy. Slightly chewy, but mostly fine. Bring your own bbq sauce, the house sauce was a bit too vinegary for my taste. Probably would go to Cousins before here, but its better than most of the other airport BBQ spots.

Ribs were very greasy, bland, and fatty. Never had ribs so greasy. No smoke on ribs at all, and lack of seasoning or rub. Sauce says molasses, but taste like a regular vinegar base sauce. Tasted like ribs were boiled and baked.

This place slaps! You can’t miss with proper TX BBQ, and wowowowow this was proper. Asked my server, Gilberto, what the best item on the menu is, and he recommended the pulled pork sandwich. Make sure you get bacon Mac and pay a little extra for the coleslaw. Pop some slaw on that sammich and enjoy dinning bliss! Gilberto was hilarious, and made the entire experience a million times better. This meal and experience was worth every penny! If you fly through this airport and like BBQ, don’t miss out on Hickory, and if you’re lucky enough to get Gilberto tell him Eric says hi :).

It’s an airport, so adjust your expectations accordingly. That being said, let’s start with the service – zero complaints. Monica was behind the bar and she was fantastic! Great personality and she was running the show. Appreciated her recommendations and attentiveness. Food: quesadilla was okay at best. Fries were super fresh and seasoned well, would order those again for sure. Had a bloody mary and negroni and Monica made both.. I’ve eaten at a lot of airport bar/restaurants and the service and drinks at this one were great.

We were at DFW Airport with a 4 hour layover and decided to try Hickory. It specializes in Brisket and pulled pork. We had a brisket quesadilla and a pulled pork sandwich. The sandwich was good except for the overcooked meat, the quesadilla was cold and also had overcooked meat. Both were skimpy on the amount of meat. The Cole slaw and potato salad are out of cartons and taste isn’t that great. No sauce is on the meats so you have to add your own, but the sauces are good. Sadly the meat is mostly hard chunks that have been overcooked all day without any sauce, so there isnt any cooked in flavor. However there is a great wait staff.

Chicken tacos… Do not order. They are cold and made from canned chicken. Did not send back because there was already drama going on between the staff and what appeared to be owners or managers. Other people had food that looked great. But cold, canned chicken? Horrible. At least the sweet potato fries and the bloody mary were good. Poor waitress seemed stressed from something. Got a to-go box, but it went straight in the next trash on my way to my flight. Hopefully, other items are good. I did see an entire order of beef and pork for the kitchen come in, and the protein looked great from their supplier. But avoid the chicken tacos.

The best thing about this place is the friendly, efficient staff, who are awesome. The food, however, is not good. I got the brisket sandwich with the bacon mac and cheese and an extra side of steamed broccoli. The mac and cheese was just awful in both flavor and texture. The sandwich was pretty flavorless unless you dipped it in the disgustingly overpowering sauce they give you on the side. The only part of the food I enjoyed were the two pickles they garnish the plate with.
