Fresh, hand-made tortillas. So. Good. We ordered the shrimp, fish, pastor and asada tacos, and the pastor torta. All of it was insanely good. We had to approach them afterwards and let them know how much we loved it. One of the best tacos we’ve had in a long time! Highly recommend

Went on a stroll with our baby yesterday and came across this food truck. I got the Al Pastor nacho fries and my husband got the Quesabirria Tacos. Everything was great! Tortillas are hand made. Portions are huge! Highly recommend. Will be returning soon.

The quesabirria tacos are phenomenal and really big portion size. They have gluten free corn tortillas for a small upcharge (they are handmade)! The fires outside do a good job of keeping you warm, otherwise you can go into the vault and eat, watch a game and have a beer.

This is a food truck, so be on the lookout or you’ll miss it. Their burritos must weigh 2 lbs, easy. So so sooo good. Authentic and very flavorful. Probably the best burrito I’ve ever had!
Atmosphere is only 3 stars simply because the bees wouldn’t leave us alone so we went to the car.

Best quesadilla I’ve ever eaten. It was so delicious that I ate half of it before thinking to take a picture – it does come with four pieces.
I usually think of quesadillas as a dish I can easily make at home, but this one is a glorious exception. The cheese was maximum yummy and perfectly melted, with just the right amount of delicious carnitas, all folded up in a light, crispy (but not too crispy) tortilla.
It comes with sour cream, super fresh guac, and homemade salsa. I’m a fan of hot salsa (they also have mild), and Imperio’s hot salsa is one more reason to love this food – it’s a little spicier than typical restaurant hot, without missing a bit of flavor.
I really shouldn’t be surprised that El Imperio’s quesadilla is tops, because everything I’ve eaten there is great – my other faves are the quesabirrias, the fish tacos, and the pupusas (which come with a really tasty pickled slaw). It’s also conveniently located on the patio of Kobold Brewing, my favorite brewery in town (which also has cocktails, an impressive whiskey menu, NA beer, kombucha, and lots of board games). These folks make it easy to have a fun and delicious evening!

Hand made with love that you can taste! By far my favorite Mexican food in all of central Oregon. Possibly in all of Oregon! Definitely worth the wait time, grab a beer at the vault tap house and sit by a fire while you wait!

Food service truck associated with brick & mortar brewhouse (the Vault) which food can be eaten if desired (hence the 5 stars for atmosphere). Food was very tasty and service was quick.
