Incorporating traditions from ancient Mayans by boiling, grilling, and roasting extensively to process food, especially meat. These cooking methods are present in Chef’s Yahs style of marination where you have choices of authentic meats like cochinita pibil, poc chuc, annatto rubbed chicken and relleno negro.
