What made it even more exceptional was having EJ and Chef Clarke guide us through each step of the evening. I had been to Chobap previously and had had an amazing experience. I’d shared this with my 10 year old who knew we would be visiting the west coast in the autumn.
My son lovvvvvvveeeessss cooking, sushi, Korea and Japan. When we were preparing for my work trip I asked him what he wanted to do the most (he was going to get to tag along). Chobap was the first thing out of his mouth!

We are heading to Japan and Korea later in the spring. Chef Clark has set the bar high! We will be be eating our way across both countries, working on our sushi rice technique, learning about fish selection differences between Korean and Japanese fish preparation, and working on our knife skills.
My son loves the idea of apprenticing some day! . Who knows what the future holds. Thank you to the Chobap team for inspiring my young man and for the amazing meal. We look forward to visiting again.
From start to finish, Chef Clark and the hostess – EJ delivered a masterfully curated meal that felt personal, thoughtful, and beautifully paced.
Every piece of sushi showcased the quality of the ingredients and the chef’s precision. The buttery saba, A5 Wagyu, and rich uni were standouts, but what really elevated each bite was their house-made soy sauce—deep, umami-rich, and perfectly balanced with a hint of ponzu. It enhanced the fish without overpowering it.
The space itself is intimate and minimal, with just enough warmth to make it feel welcoming. EJ were kind and attentive, and they even made a subtle, thoughtful gesture for my wife’s birthday, which we both appreciated.
Will come back for more on our next visit to Victoria.
We took my partners Da recently for a birthday celebration, he’s a tough crowd usually and NEVER rates anything a 10… Well, you guessed it, 10/10. He couldn’t stop talking about the food for the rest of his trip. We should have booked Chobap every night.
It’s Omakase! You don’t get to choose
I’m not sure why the dessert was a tiny blue macaron (seems thematically incongruous) but I did think it was incredibly funny when they put a candle in it for someone else whose birthday it was! The macaron itself was fine, but nothing special, but then again the macarons here never are.
