At Chimborazo our desire is to introduce our guests to the traditional cuisines of Ecuador and the Andean Highlands. We serve hearty dishes familiar to Ecuadorian family tables. Marcos Pinguil, the owner and chef of Chimborazo came to the Twin Cities from the Cañar Sierra via the tropical coast where, from a young age, he learned to prepare dishes from Ecuador’s varied regions. In local indigenous lore, Chimborazo volcano represents Taita (Father), while the neighboring volcano represents Tungurahua (Mama). Otavaleño textiles and traditional Quichua music bring the spirit of the Andean Highlands to your dining experience.

Fabulous birthday meal! Food was authentic and well-seasoned. Sauces were phenomenal and were the cherry on top of already good meals. Steak and lamb were perfectly cooked. Chorizo was tasty!

Came here first time couple weeks ago. Everything was very Good! Huge portions. Came the other day for a Cheese Empanada to go. Put some Hot Honey on it and that really took it over the top! Got the. CHAULAFAN Ecuadorian fried rice with pork, chicken, shrimp, egg, carrot, peas and green onions. Huge portions! Lots of meats, egg and shrimp! Enough for 2 or 3 servings! I would definitely get again.

This was my first time trying Ecuadorian food, it was delicious! They have two vegetarian entree options, I got the vegetariano salteado. The sauce on it was flavorful and a little sour, but I have to say I was a bigger fan of the Aji Criollo (Jalapeño and Cilantro) sauce that’s served on the side. It was so outstanding I had to buy a bottle to take home, it was $12 for 12oz. Great experience, my only note is it was pretty chilly inside.

I am thrilled they have a location in St. Paul. The food is fantastic, a delight to the eyes and tastebuds. Potato cakes need to be on more menus – toasty on the outside, pillowy and buttery on the outside. Eager to go back and try the lunch or dinner menu.

The food was amazing. Coming from a city where Ecuadorian food can be found on every corner, I was hesitant to try it in St. Paul. I have to say, this is one of the best Ecuadorian restaurants I’ve been to.
I really appreciated how they’ve updated the traditional Ecuadorian menu to make it more accessible for people who have never tried Ecuadorian food before without losing the essence of our country. I was truly satisfied with the presentation, quality, and seasoning of the food.
The sauces? Absolutely delicious. I highly recommend the ají criollo – it wasn’t spicy at all, but it was incredibly flavorful.

Had the llapingachos and churrasco and the muchin de yuca appetizer. Food was very good. While the entrees are large portions, the cost definitely reflects that. The appetizer for the portion and price was a little disappointing. They were quick to fill our order despite managing a large order ahead of us. We did also come in on a hot day and the restaurant was almost 90 degrees making it a bit challenging to enjoy the food. Overall, good food.
