Chez Carole Paulo is a true gem! Carole is so sweet and gifted. The food is authentic Haitian-rich, delicious, and served in very healthy portions. If you’re in the pooler area or traveling give her a try. She also caters for parties/ events as well, let her be your go to!!

We were looking for something new to try while in the area and stumbled across this hidden gem one evening. Chef Carole was attentive and extremely kind! She gave us so many options for the daily specials and the regular menu was full of delicious options too! It was hard to choose, but we went for the spinach dip appetizer, shrimp scampi, spicy smothered chicken, and the kid’s chicken and macaroni. We had zero complaints. Quite honestly, we were just in awe from the moment we met Chef Carole! I highly recommend this restaurant to everyone! We will definitely be back. Oh, and the lemonade is DELICIOUS!

I love it when the owners and staff are passionate about their craft. This food is nothing short of amazing. From the warm welcome to the satisfied exit, Chef Carole truly makes dining a memorable experience.
I took my mom to dinner on a Friday evening and it’s all she talks about! The Spinach & Artichoke Cheese Fondue was more than enough even if only an appetizer. My mom order the Whole Red Snapper and I enjoyed the Haitian Smothered Chicken. The Lemonade could be bottled and sold in the middle of the Savannah River and ppl would still wait in like for it

This is definitely a hidden gem! The chef was very pleasant. The food was delicious! I had the creole crispy shrimp, and my partner had Jasmine rice veggie stir fry. Oh, and this was proceeded by the spinach and artichoke dip served with garlic toast. Again, everything was exceptional!

Great atmosphere
Ms. Carole is so warming and sweet! She explained her specials and top items on the menu.
The homemade Haitian lemonade is amazing! Order that! lol
I ordered the Belgian waffle and bacon. My best friend ordered the shrimp and veggie omelette with French toast.

The waffle was buttery melts in your mouth. The bacon was crispy and flavorful.

The omelette was filled with flavor and seasoned well. Not too salty at all. And the French didn’t need syrupy, it was sweetened just right.

We definitely be returning alone with more of our friend!

This was my first time trying Haitian food!! Chez Carole said that everything on the menu was good and she told the TRUTH! We ordered the Haitian red snapper pan seared and the Haitian smothered chicken. The flavor of the fish was so good and seasoned throughout, same with the chicken! The sides were really good as well. Can’t wait to eat the leftovers. Also the Haitian lemonade was a pleasant surprise and very refreshing The same with the chicken! You can really tell she has a passion for cooking.p You can taste it! I live in Atlanta but I will be back when I come back to visit!

Best restaurant in Savannah! I travel the state extensively and work for the state. I have found quite a few gems, but nothing like this one.
Haitian lemonade is like no other sweet drink I have ever had.
Creamy artichoke and spinach cheese fondue aka dip was nice with a little bite. Came with garlic bread and homemade chips.
Haitian beef legume with rice and beans, mac & cheese, and fried plantains was to die for. I dare you to try not to finish it. I couldn’t stop!
I’ll be back over and over and over.
Chez Carole – was exactly that! I felt at home with Carole.

The food was amazing! I ordered the lemon pepper wings and shrimp fried rice. Everything is cooked fresh to order. The service was awesome. Chef Carole came out to greet each of her guest. She serve with a spirit of excellence. The freshly squeezed lemon is the best you’ll ever taste. The complimentary bread was hot and fresh and melts in your mouth. I will definitely be back and if you’re looking for a new restaurant to dine at Chez Carole Paulo is the place to visit!

We were driving in from out of town and only visiting the area briefly, but we knew one thing for sure—we wanted Haitian food. Chez Carole stood out immediately, and we were lucky enough to discover exactly why.

The owner was incredibly sweet and welcoming, exuding the warmth of a true Tatie—that loving Haitian auntie energy you instantly feel at home with. The food presentation was clean, thoughtful, and well packaged, which already set the tone.

Now let’s talk about the food—pure mouthwatering goodness. Everything was cleaned properly, seasoned perfectly, and cooked with care. Not everyone can boast that level of consistency and quality. As if that wasn’t enough, she generously included complimentary homemade Haitian patties and pain patate to go. If you know, you know.

She is the real deal. And her food is the REAL deal.

I ordered the bouillon (Haitian soup), légume, oxtail meals, and a plate of griot. Every single dish was delicious. My partner and I inhaled the oxtail plate in about 15 minutes flat—that’s how good it was. The portions were generous, and the flavors were on point.

We took the rest home to enjoy throughout the week, and every bite continued to deliver.

I truly wish she lived closer—I would shamelessly spend my money at her establishment on a regular basis.

I highly recommend calling first before driving over so she can tell you what is on the menu and how long it will take to prepare the food.
You will not regret eating at Chez Carole.

Food was pretty good, but I wouldn’t consider it as authentic haitian food. It just tasted like Caribbean food not like Haitian food at all. It had a lot of vegetables in it. I had the oxtail and the stew chicken
