The chef uses two types of rice, each cooked with a different technique. If you know sushi, you know the rice is the true star, not the fish.
The only small suggestion is that it could use two or three additional pieces of nigiri. That aside, if you love traditional sushi, this is an absolute can’t-miss experience.
