We serve beer exclusively made in Colorado (most of our taps feature beer brewed within 20 miles of the pub), spirits crafted in Colorado, and whiskey from all over the world. Our menu is what you might call bacon-centric. We hand-cut thick slices of applewood smoked bacon and use it liberally on nearly everything. Wish you had more bacon? No problem, you can add bacon to everything on the menu. Including cocktails! If you aren’t a meat-eater don’t worry, we’ve still got you covered. We have several vegetarian and vegan options. Including our vegetarian red-bean chili made from scratch using an old family recipe.

Don’t get me wrong, it was a decent meal. There is a big difference between a restaurant that serves drinks and a bar that serves food. This is definitely a bar that serves food. There was really nothing about the meal that stood out as outstanding or peaked our interest to give it another try.

First time visiting William Oliver’s Publick House was a success. The service was outstanding, and I mean that. The drinks were great and their whiskey menu is truly something to behold. This place is great and is a much needed spot for Downtown Windsor. We only had appetizers and drinks in this first visit but everything this was great. The drinks are fantastic. This is a great place if you like Whiskey & Bacon.
The time it took to get drinks was way longer than it should be and the waitress seemed to still be learning the system but for being there in their first couple weekends and at a busy time, it was ok.
Again, we loved the drinks. I’m looking forward to trying a few of the meals and can’t wait for the patio to open.

We are hosting a welcome dinner for our wedding here and they have been incredible! I would give them 6 stars if I could. They are polite, knowledgeable, and did everything we asked to make our party successful. I’ve been working with Cole and I can’t say enough great things about him. Definitely recommend.

Great place to hang out with your friends over the best drinks served in Colorado! Their variety is astounding and the service doesn’t compare to anywhere else. For the night, I got the JGLBT which may I say was the best sandwich I’ve had in a while. I hope to come back soon for the best vibes Colorado has to offer!

Food was delicious. Staff was friendly and stayed on top of keeping our drinks full as well. They have a killer Bourbon selection as well. Love when they get really hard to find Bourbon like Van Winkle, Eagle Rare, Weller ect in stock of course. Bar tenders are always friendly and quick with knocking out great pours.
Visited again July 2023 and still outstanding staff with great service. Lot of high end drinks especially if you like Whiskey and Bourbon. I got the last pour of a Weller Single Barrel bottle tonight.

If i was the owner I would be so disappointed in the Saturday night staff.
We were in there Wednesday night and was served by 2 great bartenders.
Tonight they told a group of 10 that 1 was to intoxicated for her to serve everyone. Its a bar. They are meant to serve drinks which gets people intoxicated. Everyone was extremely respectful and nice
There were 4 people in the bar.
No one in our group was out of control. Yes we had some drinks at the tavern but not more then 3 each.
We left without a problem but will never come back.

Absolutely love this place! Great food, order the pork sandwich and the pork tacos, mind blowing good, same with the green chile. Awesome whiskey selection, Cole and Tiffany and Alyssa and Eliza and Zack are amazing bartenders!

I’m new to Windsor, CO. I was looking for a nice place to have lunch. Most don’t open till 4p. I found William Oliver Publick House. WOW!! What a great place! The variety, quality and price of the food was fantastic. The friendly service and casual conversations was the kind that make you want come back. And they’re open 11a-2a seven days a week!!!
