This is the latest from John Resnick and Chef Eric Bost, the duo behind Michelin-starred Jeune et Jolie and Campfire (also woodfire-focused)

They opened this spot in late 2024. All day spot designed to feel like a rustic bakery/bar/restaurant. Tons of handmade pastas, baked goods, and their signature wood-fired pizza oven cranking out smoky goodness

The food is legit tasty. The pizza sandwich was huge.. loaded with carbs but so filling and worth every

The fresh OJ is SO GOOD!

Service is smooth. Space cozy with indoor-outdoor seating

3.5 stars. I wanted to like them more but the entrees were a tad disappointing. We had reservations and I recommend making one because this place is busy. We parked in the public parking lot one block over so it was a 3-ish minute walk to the restaurant. The ambiance is posh with an industrial yet minimal feel to it. The two person tables are a little smaller than we would like (3 plates of food just about fit on the table). The chairs are uncomfortable.

We started with drinks – my friend got the margarita and I got the boxing day cocktail. The margarita was based off grape juice but somehow sweeter than we anticipated. My friend does not like sweet drinks and we had to ask for almost no agave to make this drink to her taste. The celery salt was interesting and the best part of the drink. It should be spread all around the rim and not just on one corner. I know it makes the presentation look better but that salt cut down on the sweetness immensely and we loved that combination. PLEASE add the salt all around the rim!

The boxing day was a gin based cocktail served as a latte. While you get a hint of gin, it isnt overwhelming, so I liked it! It tasted like a decaffeinated latte 🙂 it is a pricey cocktail though because we paid $18 for this.

For food, we started with the wood Fired Cabbage, then the ‘Nduja pizza, followed by the lamb meatballs and bucatini carbonara, and a dessert of the chocolate hazelnut cake.

The wood Fired Cabbage was the bomb and I will definitely come back here for this dish. The cabbage is, as the name suggests, wood Fired and then stuffed with salad, crispy shallots and covered with shredded Parmesan. The whole thing is delicious and surprisingly light! The shallots elevate the dish completely.

The ‘Nduja felt like there was a lot happening – too many ingredients, too many flavors so that nothing was able to stand out. The menu said there was spicy ‘Nduja. We didn’t taste the spice because the cheese, the onions, the fennel, everything overpowered the main component of this dish. I also felt that the crust was fried and burnt a little. I would request removing a couple of ingredients so that the star of the dish i.e. the sausage, can remain the star.

The lamb meatballs were ok. Nothing to sing songs about but not bad either. The bucatini carbonara was not good. There was a weird flavor in the dish, which I think came from the guanciale…an almost sweet bitter flavor that ruined the carbonara flavor. I also felt that the carbonara sauce itself was thicker than I am used to. The bucatini was a little chewy too. All in all, that dish wasn’t my favorite. It tasted better the next morning after I had cooked it a little more.

We ended the meal with the chocolate hazelnut cake. We thought it would be an individual cake but it was a slice. The cake was delicious but heavy. The hazelnut chocolate ganache in between the layers was delicious and the cake sponge was soft. Between the two of us, we finished less than half the slice, so I highly recommend getting this only if you have more than 2 people in the group.

All in all, our experience was not as wonderful as we would have liked and this was primarily driven by the main course. We won’t be back.

What a fantastic place. We were recommended to try it while in Carlsbad. It’s a quick drive from Legoland. We came for, breakfast, lunch, and dinner. Everything was awesome, fresh and flavorful. The building is huge and cleane with a fresh modern look. The bread and pastries where very good with amazing flakes buttery crusts. The cappuccino was very good.

I am delighted to share my experience at Wild Land, where I am currently enjoying an exceptional dining outing. The ambiance is inviting and sophisticated, perfectly complementing the innovative menu offerings.
One standout dish is the meatball entrée paired with fava beans, which is nothing short of remarkable. The meatballs are tender, flavorful, and expertly seasoned, harmonizing beautifully with the earthy notes of the fava beans. This combination elevates traditional flavors to a new level of culinary excellence, making it a must-try for any discerning palate.
Equally impressive is the cabbage appetizer, a creation I have never encountered before. What could have been a simple ingredient is transformed into a superb dish through skillful preparation—perhaps involving creative techniques like fermentation, roasting, or inventive pairings—that results in a delightful balance of textures and tastes. It is innovative, fresh, and utterly memorable.
Overall, the service is attentive and professional, and the quality of ingredients shines through in every bite. I highly recommend Wild Land for those seeking a refined and adventurous dining experience. Five stars well deserved.

Excited to come back here and try some other dishes for dinner vs lunch. I got the Pizza Sandwich and it was good, I would get it again, I liked the small side of pickled carrots and cauliflower. Overall, the sandwich was filling and tasted great. I was definitely full after having it, and barely had room for the cheesecake.

The cheesecake was not extremely rich, but rather light, which I did not expect. I usually do not get dessert, but I wanted to try it. Then my friend got the pizza and coffee cake. He mentioned he enjoyed it, especially the coffee cake.

Very nice outdoor seating area. The salad was flavorful and with a lot of texture. Croissant sandwich is flaky looks beautiful. I’d prefer more flavor on it though. French toasted with whipped cheese was so nice, whipped cheese was so fluffy and creamy addition to the toast.

Great location with great ambiance. The build out is great and the textures and decor are well done. We visited for dinner which is table service. Breakfast and lunch are fast casual order at the counter.
The hostess, bartenders, bussers were great. Extremely friendly and helpful. Our actual server seemed very spacey.
The food was delicious. The lamb meatballs were delicious and the beans served underneath- heaven! The cake was just okay but nothing to rave about.
