
VITALIST, a new global cuisine concept on Lake Minnetonka by celebrity Chef and Founder Sarah Ann Haugen, is now open in Spring Park, replacing the former VANN restaurant. VITALIST’s organic, gluten-free elevated nutritional cuisine menu will feature a coffee program, haute and chilled superfood drinks, unique soups, salads, sweets, and hand foods. VITALIST Superfood branded drinks can be found in Kowalski’s on Lyndale and Excelsior, French Meadow locations and variety of coffee shops around the twin cities. Plans include a grand opening late spring when Chef Sarah H will launch a flavorful Cal-Mediterranean wine and dine evening menu and dock service. Look out for the unicorn!

Sarah was so friendly, always smiling. I went inside but requested the outside seat, and she informed me of what she was doing. I liked that. She acknowledged her customers. ❤️❤️
She went to wipe the outside table due to dirt, and yeah, the environment was peaceful. I just there listened to those cars, watched the lake, and enjoyed my meal.
I think in the summer it will be packed.
Edited since our first post to say this is by FAR still my favorite restaurant in MN! We’ve come now dozens of times and often drive 40+ min to get here as we live on other side of town. Our 3 children love it too! Seed oil free and you feel light and healthy after eating here. Some of our FAVORITE menu items are: Moroccan Chicken, Japanese Bowl w Salmon, Chipotle Chicken Tostada, Global Bowl, Mediterranean Bowl, Kale or Miso Ginger Salad w/ chicken added, ALL of the fresh juices, the organic berry smoothie with house made Brazil nut milk, and the Homemade bone broth ramens. YUM! Added more photos from some more recent visits. Love this place so much.
Entrees are limited in number but exceptional – I have tried the Moroccan chicken, the salmon and the halibut. All 5 stars and beautifully presented. The flavors are spot on.
Starters – tried asparagus soup, beet salad and amazing freshly baked bread with assorted toppings. Again, all 5 stars, absolutely delicious.
They now have beer and wine. The drink options are limited but well chosen.
The atmosphere is nice casual, with beautiful views out to Spring Park Bay.

The raw pad thai sounded so interesting we had to have it. Honestly, it may be one of the best dishes we have ever eaten.
For one, the creativity of it, for two it was absolutely delicious without any guilt.
Good news is that this appears to be a regular menu item. We will be going back and I will tell everyone I know to check this place out.
Huge vegan menu selection and it’s meaningful- all very delicious looking menu options. No skimping just to put a bland or boring vegan option on the menu. The next time we go it will be hard to decide what to order because if the other options are half as good as this was, it will be a winner. Seems like the kind of place you can’t go wrong.
They also have a nice selection of house-made crackers and other healthy snacks. They also have a cooler with juices and tonics for takeout.
Coffee menu looked divine and there were also some baked goods at the cash register.

We ordered the Mediterranean Taco and the Asian Fusion Wrap. Both dishes were fresh and flavorful. The portions were generous. All or most of the dishes are vegetarian and vegan, but you can add-on chicken, egg or cheese.
Sarah and Apoorva were very welcoming and attentive. Having just opened the restaurant, they are continuing to experiment with new offerings so the menu may be changing often. They offered us a taste of a quiche they were still working on. It tasted excellent. I’ll be ordering that on our next visit.
The Location: Just across the street from Lake Minnetonka. The space is bright with many windows facing the lake to the south. We sat at a table with lots of natural light and views of the lake.
Parking: It wasn’t very clear where to park. They are working on signage to help with parking, but until then, here is the scoop. You can park in the lot under the building. Enter the parking lot on the east side of building. There are signs that say “tenants only” but apparently you can park in this lot. From there you can enter the back of the restaurant through the door in the parking lot. There are also some designated public parking spaces on the street behind the building.
