Every time I’m in Steamboat Springs, I make sure to stop at Vaqueros Mexican Restaurant & Taqueria. The atmosphere is warm and lively, and the staff always makes you feel right at home. The highlight for me is their grilled whole fish — hands down the best I’ve had anywhere. It’s perfectly seasoned, incredibly fresh, and cooked just right. Pair it with their house margarita, and you’ve got an unbeatable meal. Easily one of the best Mexican restaurants in town!

Great food, service and what atmosphere dining on the rooftop around sunset. We shared a strawberry margarita, he had the enchilada plate, I had the chicken flauta plate. The waitress was very attentive. We would return next time we are in the area.

Tasry yummy Fajitas very big portions, good service. Highly recommended. Went with a large group and everyone liked their food and drinks. Margaritas with salt was hugh and enjoyed by many in my group.

Food is pretty good, we got fish fajitas and menudo. The menudo gave me food coma in a good way, but the tripe smell can be pretty noticeable. Took one star off from the food because the tortillas on the side are thinner than what we’re used to, and it felt like they just heat it up in a microwave and just didn’t hit home. That said, portions are pretty big. Service is average, not terrible but not commendable—it’s ok though. Overall 4 stars because it feels a bit overpriced. We didn’t get expensive drinks and the entrees are mostly 20-40$. Well yes there are some combo that are $15-20 but that’s only one page of the menu and not the fancy stuff.

I would like to express my discomfort with a situation I experienced during my recent visit to your restaurant. While I was enjoying my meal, a staff member began cleaning an area very close to my table using a product with a very strong bleach smell.
The experience was quite unpleasant, as the odor was overwhelming and completely ruined both the taste of the food and the overall atmosphere. I understand that cleanliness is important, but I believe it should be done at times or in areas that do not interfere with the customers’ experience.
I would appreciate it if you could take this feedback into consideration to improve the dining experience. I’m sure many of us value both hygiene and a comfortable, enjoyable environment.

This is one of the best Mexican restaurants in the area! The service was fast, attentive, and great quality. I ordered a chimichanga by itself. Next time, I’d get the combination with a chile relleno! The shredded beef was delicious, as was the beans and rice. The chips and salsa were also really good. We ate in on a Friday afternoon before dinner rush. My partner had the shrimp tacos and they were good however we would certainly try something else as their menu is large.

Menudo was on point. The tripe was perfect. My wife said her tacos were really good. Had a godfather marg it was also good. Service was fast and friendly.

We absolutely loved this place! The servers were very friendly. They have a huge menu with tons of choices including steak, chicken and seafood dishes. Everything we ordered was excellent. The inside is surprisingly large with an upstairs and a downstairs, two full bars. Excellent margaritas. Great family friendly choice. Would definitely go back!!
