Uberto features a tasting menu that embraces our farm in every dish, incorporating produce and proteins from both our land and surrounding vendors. Chef Smith’s offerings pay homage to the cyclical nature of our operations and showcase the beauty and use of our property as a whole. Uberto and the chef’s tasting menu are offered weekly on Fridays and Saturdays.

This truly farm to table kitchen is actually on the Quercus farm, a luxury lodge resort with a comprehensive well managed garden planted exclusively for supplying the restaurant and guests of the lodge.
Chef Ryan is pushing the envelope in this new project. Every dish was not only delicious, but truly unique – a major accomplishment in the largely derivative world of fine dining.
If you enjoy fine dining but feel there is nothing much new to discover, head down to Uberto to be reacquainted with innovation and supremely balanced cooking.
I appreciate the time, effort and forethought serving behind the scenes in the preservation, fermentation and curation of ingredients from the ground to our plates. This menu was stewardship served beautifully on a plate. Each bite was full of integrity, balance and exquisite culinary artistry. A well choreographed immersion of dining and hospitality.
