Trip took care of us, and that brings me to the Espresso Rub Elk Loin: hands down the best meal I’ve had in a year. The bitterness and spice of the rub, slightly counteracted by the sweet huckleberry demi-glacé make for this enigma of a meal, our server Trip sung its praises and if stay for dinner there’s no other recommendation
Farm to table concept with a great mix of small bites, salads, proteins, comfort foods… something for everyone really. I was eyeing the Wagyu steak but opted for the elk loin as it’s the Rockies after all! The bar selection of cocktails includes an impressive whiskey and bourbon curation as well as classic mixology, wine and beer.
I remembered this place from my previous visit and thought I would drop in after night ski. Very happy I did so — had the good fortune to come for their opening night of the season. In fact, I was surprised to learn this was the first night as the service was already impeccable and the food was fantastic. I also had a chance to meet the owner Scott on the way out the door, very nice guy. I can appreciate his attention to detail.
If you are hungry at the steamboat village base real estate, don’t think twice nor root around — this place goes the whole hog — worth pigging out!
The food was nothing short of spectacular. I tried the Truffle Pig Bacon Burger, and it might just be the best burger I’ve ever had—juicy Kobe beef, aged cheddar, and those famous truffle fries that live up to the hype with their crispy, flavorful perfection. The Mussels and Fries were another highlight, served in a cast-iron pot with a garlicky white wine sauce that I couldn’t get enough of. And the Baby Beet Salad? Fresh, vibrant, and beautifully balanced—a total treat for the senses.
The service was top-notch, with staff who were attentive, friendly, and clearly passionate about what they do. The cocktail menu is a standout too—creative and expertly crafted, with options like the Battle of the Agaves that paired perfectly with the meal. Truffle Pig nails every detail, from the farm-to-table ingredients to the warm, inviting vibe. It’s a must-visit in Steamboat Springs—I’m already looking forward to my next trip back!
Response to the owner. We were seated at 3:24 pm. 11 minutes later I grabbed the server and asked her if she was our server. You’re clearly lying about the surveillance time stamp. Also the fact that you’re trying to shame me about the $4 overage online (25% higher pricing than advertised) is an embarrassment. This was my first time here and a test. I obviously am happy to spend much more at an establishment which I enjoy, but I’ll never be back. I didn’t feel like waiting 15 minutes for your poor overstaffed server to refund the $4. My wife and I had enough and left as soon as possible.
An appropriate response would simply be yes we should staff more servers for happy hour, and honor honestly our advertised pricing, instead of attempting to shame clients online. You should look at this as an opportunity to improve not an online spin room. Every silver lining has a touch of grey.

I would recommend McDonald’s before eating here. Insanely over priced and bad service.

It’s a very nice restaurant with great ambiance and decor. Appetizers were great. We tried foie gras and pig cheeks. Super. Amazing desert “chocolate Galaxy”
The main dishes were good not great. And kinda expensive. We had a great time.
