The beef tartare was also really good. We especially appreciated that all the sauces were served separately since most places mix everything (including the mustard) directly into the tartare. It was nice to be able to adjust the flavors to our own taste.
The truffle pasta was decent — good, but not as standout as the steak. Our only real complaint was the eggplant parmigiana, which was super salty for our taste. When we mentioned it, the waiter explained that it’s meant to be salty because they use salted oil and also salt the eggplant itself. We’re not sure if that’s the traditional style or if we’re just not used to it, but it was a bit overpowering for us.
Overall though, it was a good experience. The steak alone makes it worth visiting — just order the eggplant parmigiana at your own risk!
The pasta course arrived next in an unexpectedly vivid shade, the kind of dish that turns heads in the dining room. The sauce had that slow-cooked, almost rustic character that sticks to the noodles in all the right ways; comforting and a little surprising, which is not always easy in a city packed with carbon copies of the same recipes.
Then came the star: a 1.2-kilogram Chianina bistecca alla Fiorentina, served sizzling on its hot stone and seasoned only with coarse salt, the way Florentines insist it should be. Thick-cut, deeply seared, and ruby-centered, the steak delivered exactly what Chianina beef is known for: clean, mineral flavor and a tenderness that doesn’t need anything more than a good char. The roasted potatoes on the side did their job quietly but well.
Dessert closed things with a playful contrast, boozy baba paired with a light, almost cloudlike cream dotted with berries. After such a heavy main, it worked.
Overall, Trattoria Dall’Oste offers the kind of meal that fits Florence’s steak-house tradition without feeling forced. The service pace, the hot-stone presentation, and the quality of the Chianina cut make this location worth seeking out, especially for anyone wanting the full bistecca experience close to the historic center.
The Costata wasn’t salted, but was still delicious. I personally prefer my steak with salt to bring out more flavor, but with the quality of the meat, it was still very good.
I was concerned it would be too red, but the kitchen did a great job with the medium-well that I ordered. The crisp char and tender texture of the meat was a perfect balance.

For the main dish, we had the Florentine steak. It was amazing and really filling for two people!
We also ordered potatoes on the side a perfect match.
For wine, we had a Chianti Classico red, and everything was just excellent.
The price is a bit on the higher side (around 200–250 euros), but totally worth it for the quality and taste.
The pasta was cooked al dente, and the quality of the ingredients, especially the guanciale and cheese, was clearly noticeable. The atmosphere is warm and authentically Italian, and the staff were friendly and professional. If you enjoy classic Italian dishes done right, Trattoria Dall’Oste is a must-visit, and the carbonara is an absolute highlight.

Really juicy, very thick and tender, the meat is great and feel very unique in its own way, much different experience compared to Spanish Asador style. Might be a bit too thick of the cut for my taste

Very delicious, extremely rich and creamy with plenty of truffle on top and the portion is enough for 2 to share

Smooth and creamy but not as rich as how tiramisu should be, good overall
