This cafeteria-style setup in Busch Gardens dishes up smoked spare ribs, beef brisket & chicken.

Overpriced, super long line, and poor quality food. My family visited busch garden over Christmas holidays. We heard good things about this place and saved it for Christmas dinner. We got to the place around 4:30 and there was already a long line. It took us more than 45 mins to get food. We ordered ribs and chicken platter. As you can imagine, it has theme park premium and over-priced for a few pieces of chicken and ribs with two sides. There was heated seating area next to the restaurant and we were able to find seats, thankfully. It is not a sit down restaurant and there is no such thing as service.
In terms of quality, rib was super dry but greasy at the same time. It was not a pleasant feeling to put that in my mouth after waiting almost an hour. The only reason I kept eating was because I was so hungry. Even my hunger could not make it better.
Chicken was a bit better and had a little bit of softness and juiciness. Fries were soggy. Coleslaw was probably the best thing to eat here.
I am going back to Busch garden in a few months but would not go back to this place again. Overall, the food option is extremely limited in busch garden. Be prepared for it.

We visited on a Saturday in late November 2025 during Christmas Town.
We had a 4 all day dining passes and it was totally worth it based on the price of these entrees. We order 2 Trapper’s smokehouse samplers, a st. louis style bbq ribs and a salmon platter.
The trapper’s smokehouse samplers were great. You get 2 slices of brisket, 2 ribs and a chicken thigh. You also get a large roll and fries that all counts as the platter so the meal plan allows a side or dessert as well. We decided on fried pickle spears and soda.
The st. louis style bbq ribs had like 4 or 5 ribs on it and came with side of fries and roll as well. For the side we got mac and cheese.
The salmon platter came with a fairly large piece of salmon, green beans, potatoes au gratin and a roll. The green beans were very flavorful and looked to be cooked with onions as well.
We would order all of it again in a heartbeat. It was very delicious.
Was it worth the cost if we had paid without a all day dining plan, absolutely not. But as 1 meal when we had a total of 6 for the day bringing it to about $5. Absolutely!
This was probably my favorite restaurant food of all the options we had during our visit.
We did have to sit outside and it had just rained so even with umbrellas many seats were still wet.
The staff was very nice and while the line was long it moved relatively quick.

We were saving this meal for last, having snacked around the park all day with the dining plan. When I saw the menu prices, I was SHOCKED. What we paid for the all day dining plan was nearly the cost of the sampler platter! I feel terrible for parents trying to feed their families here, it would cost well over $100 and not be worth it.
Watching food be served while in line, I decided to choose a simple BBQ sandwich. To my dismay, the meat was not high quality and surprisingly had very little flavor.
The serving stations were a mess, with food on the outside of the small cups (see photos) and the area behind the line was a kitchen nightmare. But we were hungry, thirsty and on our way out. None of the drink machines had any ice, and it took me a long time to get an employee’s attention. It took me three tries to communicate “You are out of ice!” and after getting my message across, all I got was a shrug and “we called”.
If we go back to this park, we might forego the all-day dining, but will def. skip this restaurant even if we purchase it. Sorry for the negativity, but people need to know before spending crazy amounts of money at this place.

Brisket was cold, greenbeens was not cooked thoroughly, ribs was decent, chicken a bit dry, salmon lack flavor not unless you ask for more honey glaze. Do not eat the apple cobbler it will give you acid reflux. The only thing warm was the fries and mozzarella sticks.

The exterior is nicely done and we had high expectations. The decor looks like a really decent barbecue place but the food is pretty bland. Not a smoked flavor at all, more like oven cooked with a little sauce. The service was okay but not really friendly. The French fries were good.

This was a pretty decent place, nice décor and setup. I got the Trapper’s signature smoked chicken for $23 which is a ½ BBQ chicken with fries and a roll. The chicken was good, would have liked just a little bit more fries for the price. I also got a side salad for $8. The food was good. Seating was decent as well.

Waited over 40 minutes to get food. Once you actually get into the area to grab your food the environment is really dirty. The heat lamps are absolutely disgusting and have caked on grease and dust. Looked above and the air vents have thick layers of dust and dirt caked on. It’s a very open concept and there isn’t any way to keep the inside sealed which is understandable of all the debris all over the walls and lights. But for 2 meals and two bottles of water and a side of fries it was about $100 bucks. Which for that kind of money I would like to not guess if there is going to be something gross lingering on my food. And the concept of having the drink machine at the end of the service area is slowing down the service line. People are taking several minutes just to get drinks and all the people behind them have their food in their hands waiting patiently to leave. After nearly an hour of that mess I get to the table to eat and half of the meat on the sampler was cold. The food that was warm was really good. The brisket and ribs were very delicious and smoky. Would have been even better if it was hot. I wish this was a smaller concept or have multiple locations in the park so quality and time can be improved. I would have gladly paid that kind of money for a fresh hot plate and a cleaner atmosphere. Will not wait in line for that ever again.

I have never left a review on Google but felt the extreme desire to do so after my experience here. If I could give this place 0 stars I would. It smells great from afar, but the food does not live up to the tasty aroma. Everything was flavorless and dry. The ribs were mediocre at best, but they were definitely not worth the price considering it was almost $40 for ribs, fries, and a slice of bread. The bread roll itself had MOLD in the middle. My friend bit into the roll and realized halfway through the bite that there was mold. The only thing that saved this place was the lady who gave us a whopping load of fries when we asked for more. Would not recommend.

We have the dining plan and it includes this meal. This meal alone almost reaches what the plan cost. Dining plan is worth the money. The food was delicious. Hit or miss on weather the ribs were dry or not. Some ate fatty while some are all meat. Brisket was good and not dry. Chicken was dry but good flavor. My son and I agree the fries are amazing while hot. Bread was great. It has a different flavor but do good. Mac and cheese had a different flavor and might not be liked by picky eaters that can tell taste difference but I liked it. Pineapple was perfect. Juicy and sweet. Makes a perfect substitute for desert and helps with digestion. We could have gotten away with only 2 meals for the 3 of us. We weren’t able to finish all the food we got. Not sure if I want to ride anything for a bit. Water is free everywhere.

I got the sampler plate with chicken, ribs and brisket. The brisket had a great flavor. Would have liked thicker pieces but even the thin pieces were very tender. The chicken also had good flavor but the ribs were a disappointment. The ribs had very little flavor and were not tender. The waffle fries were also pretty good. I didn’t grab a dessert but they looked really good as I walked past them in the line.
