I ordered the BRAISE BE – Michelin Collab Favourite (24hr Braised Short Rib, Fontina Cheese, Demi-glace, House Potato Chips, Crème Fraîche, and Chives). Honestly, I thought it would taste like regular pizza… but oh my goodness, this was on another level.
The 24-hour braised short rib was incredibly tender and flavorful, and the combination with the creamy fontina and rich demi-glace created such a unique, balanced taste. The sourdough crust had that perfect texture, crispy on the outside yet soft inside which made every bite even better.
The experience of trying it “blindly” and being pleasantly surprised made it even more special. It’s not just pizza; it’s an experience.
I now officially have another reason to drive back to Elora. This pizza alone is worth the trip, and I’ll definitely be coming back for more.

Honestly, this would’ve been a straight-up 5-star pizza if they’d just given me about two extra inches of za. Especially since the price was a little steep for such a tiny pie. When it’s that good and that expensive, I’m gonna need more of it.
The pizza was absolutely delicious, the crust light, airy, and perfectly crisp. We had the privilege of watching a few pizzas being made before ours, and the attention to detail that goes into every pie is outstanding.
Also, the gentleman who took our order was super sweet and took the time to walk us through the different pies, which made choosing super easy.
We came the evening before, but they were already sold out! It’s worth it, so get here before they do!

A heads up – the wait was for about an hour due to the sheer number of tourists during the Halloween March event.
I would come back again to try the other flavors.
Umami Pie:
– Awesome mushroom and truffle flavour
– Wished it was a tad more savoury (it’s in the name after all), it was almost a little bitter
Weekend Pie:
– Red sauce, pepperoni, sausage, red onion, cheese
– Really nice combo of savoury flavour
Nice amount of chewiness in the dough from the sourdough which makes it stands out from your average pizza.
Tiramisu:
– Sleeper hit for sure, it is super creamy and soft – one of the best tiramisus I’ve ever had
– The perfect amount of sweetness, with just the slightest bit of brightness from the zest to balance it out
Fantastic place for more gourmet pizza options. It is a little pricey at ~$20 per 10-12 inch pie, but that’s pretty on par for artisan pizza. There is limited seating inside but there are several patio tables.
Do dine in and you can have the very awesome first bite!
