Excellent Experience at Republic of the Rio Grande
Everything about our visit was excellent — from the atmosphere to the food and especially the service. The ambiance was warm, inviting, and perfect for a relaxed meal.
Our server, Jesse, was absolutely outstanding — hands down one of the best servers we’ve had. He was extremely attentive, professional, and made sure everything was perfect throughout our visit.
We started with the queso con chorizo as an appetizer, and it was rich, flavorful, and delicious. My husband ordered the Santa Fe Ranch Flat Iron Steak Plate, cooked perfectly and full of flavor. I had the Mexican Calzone, and it was incredible with chorizo cheese and pineapple — fresh, well-seasoned, and absolutely satisfying.
Every dish exceeded our expectations. Great food, great service, and a great atmosphere. We will definitely be coming back and we highly recommend asking for Jesse if you visit!

Food was absolutely delicious and fresh. I was sat down immediately and it did not take long at all for me to get my food. I ordered the beef short rib and the goat cheese pizza. You will see plenty of reviews of the delicious pizza (rightfully so) but that short rib was so tender, I’m debating on getting it again for lunch before I head out of town. The sauce was mild and nutty, the vegetables were well seasoned and the mashed potatoes were yummy. I wish I could have brought my plate up to the kitchen for seconds. I did not get a chance to try their cocktails, but I can’t imagine them not being delicious based on everything else. They have bar, table, and patio seating which had heaters since it’s January. Would 100% recommend and be back.

Incredible place! Walking in, you see the white table cloths and it previews the great, but not ostentatious, service. They seated our group of eight in a little alcove private dining room.
I had the pipian mole rib which was so tender and flavorful. They let me substitute asparagus for the mixed vegetables and I added a side of street corn (elote), which were both delicious as well. I have attached pictures of both platings.
Someone else got the salad with shrimp and the shrimp were huge and well grilled. Another got theirs with salmon which was a generous portion. There was a marguerita pizza in the menu, but when one in our group wanted it as a calzone, they happily obliged. The wedge salad was presented beautifully.
As though there wasn’t enough food, they had nice crusty bread. And their ice tea was well brewed (good flavor, not too thick or thin). Reflects their attention to detail.
We all agreed we would definitely dine here again!

We had a really enjoyable meal here. I went with the half rack of baby backs, mixed vegetables and elite corn. My wife ordered the avocado chicken with rice and vegetables. Both dishes were well prepared and seasoned perfectly. You could tell the kitchen knows what they are doing.
Our waiter was friendly, knowledgeable and gave helpful recommendations. We finished with an almond taco for dessert and it did not disappoint. The restaurant itself was clean and had a nice atmosphere.
Definitely worth a visit.

Our first time eating at the Republic of the Rio Grande restaurant on my birthday. What an amazing experience. I had the avocado salmon and my husband had the 12 oz ribeye.
Both were excellent. Our waiter, Hector, was wonderful. He made me one of the best old fashions I have ever had! Dessert was an on the house almond taco filled with vanilla mousse that I had read about and it did not disappoint. Our first time there but definitely not our last!

My husband and I visited the restaurant on Friday, 2/27/26. We ordered a wedge salad and wine to start off. The wedge salad served was served yellow, hard and far from crunchy and crisp. We asked our server, Erika, to exchange it for a Greek salad but instead offered to chop up our wedge salad for better eating. I than said, well than it won’t be a wedge salad, so unwillingly she exchanged it for a Greek salad, but not before saying she had to speak to the restaurant manager. We got our Greek salad, and it was far from a Greek taste. It seemed to us that the Greek salad was a mixture of our returned wedge salad and part Greek. Moving on we asked another server for additional bread and he forgot about us, so we had to flag down another server and asked him that we had previously ordered additional bread and kindly brought it over. Oh my goodness so many servers standing around and seemed like Erika was the sole server. Like she was covering a lot of territory and neglecting her customers. We also had to waive down another server to get more wine because Erika was busy behind the register. We know because she was within our eyesight Needless to say we will give the Republic of Rio Grande a long rest. The service and quality of the food has declined. I feel like better management skills and training is needed to improve the quality of customer service. Maybe continuing education like other businesses require.

Lenny did an amazing job serving us, he was very helpful and friendly. The food was great, this is one of our family’s favorite restaurants. My brother got a free desert for his birthday and it was soooo good. I had the avocado chicken and it was really good too. We will be coming back soon!

Excellent atmosphere on the terrace. I was truly amazed, but the service was incredibly poor from the entire staff, especially from the waitress/hostess Michelle! Terrible service to my cousins and me. I can’t believe how disrespectful she was when she threw plates at us. I’d never had that happen to me in any restaurant, but thank goodness the food was good, and the atmosphere, along with a nice glass of Merlot, relaxed me.

As I entered i was greeted by Erica, she took care of my wife and I. The atmosphere here was relaxing, not loud, and very clean. The food was phenomenal. I had the avocado chicken that made me melt with how great it was. Saddest part of the meal was in my last bit knowing it’ll be the end. For dessert I had the almond taco. I’ve traveled to Japan before and hadn’t had a similar dessert as good as what I had since then. The cream and berries made me go to heaven. The almond brittle taco itself kept me from dying of how delicious it was. 5/5 stars. I personally asked for the one that made the food. Lenny shook my hand and I asked if I can recommend him again next time to make my food. Will definitely come back. Exquisite place everyone needs to try.
