My partner and I had dined here once before, and when we returned for our second visit, the staff remembered us right away, a thoughtful touch that made our evening feel extra special. The food was absolutely outstanding. We chose the Chef’s Tasting menu and highly recommend it! From start to finish, the service and overall experience exceeded our expectations. Every experience I have ever had with Derek and his team has been outstanding. His passion and creativity come through in every dish he creates. And every dish has a beautiful story behind it and how it came to be. I know this creative endeavor has to be very taxing for him and his family, but keep doing what you are doing! Because it’s amazing and truly a rare gift to this area.

I’m not from here I’m from Los Angeles and I thought it was really adorable place. What turned me off when I asked for some sugar substitute because I have to watch my sugar intake. Instead of saying all of our ingredients are natural he kind of sarcastically said we don’t have anything fake hair looking at me right in the eyes. I don’t know if he was in a bad mood or if he prejudged me or what the problem was. He later offered some honey which was fine I just never felt any inviting and warm vibes from him. Other than that his wife And child were adorable. And the food was good however I’m Not sure I want to subject myself to that kind of treatment especially when you’re paying that kind of money.

Finally a fine dining experience in the panhandle! The food was exceptional to go along with a tremendous atmosphere. The service was intentionally attentive, from the server, to the bartender, and even the chef bringing out the food. If you are in the panhandle looking for an actual date night spot or have family in town, take them here! I promise that you will not be disappointed. Well done!!

In small town Mitchell Nebraska, Chef Derek is bringing “farm to table” a whole new meaning. Truly a full dining experience! His passion for food was evident in every dish and culinary creativity was next level. My husband and I have had his dinner menu and now brunch. Paradigm Concepts has gained two loyal customers! Worth a visit. If Beef Cheeks are on the menu, don’t hesitate!

Gourmet food in a small-town family friendly restaurant. We have a baby a few months younger than Derek and Cassidy’s and feel comfortable bringing him along. Unique flavor combinations and great use of local products. This time we had the grits diablo and the breakfast sammie. Everything we’ve tried has been delicious! And we always leave with some homemade sourdough bread and desserts.

Fantastic! My friend and I went here over the weekend for her birthday dinner and we had an absolutely wonderful experience beautiful atmosphere, incredibly creative and delicious food, incredible service. Even got the waiters to sing Happy Birthday to her! Plus, we had an incredible chocolate torte for dessert. You’d never believe this place exists in scottsbluff, let alone Mitchell. Highly recommended!

A diamond of a restaurant in scarcity of high end restaurants for the area. Great service, owned and operated by locals, Saturday night meals are top of the line, with a starter and fresh from their garden vegetables.

All fresh and local ingredients, (you can definitely tell the difference), and elevated details of each dish like specialty sauces, and house made infused oils, and seering done right!

Double check their hours online before you come, Saturday nights and Sunday Brunch are my favorite!

Quaint, delicious, friendly-family feel. Everything locally sourced. Great brunch location in Mitchell, NE. If you’re passing through or local, make this place a stop. Menu selections unique. Seasoned perfectly. Ordered the fried chicken. Came on a bed of white refried beans and seasoned with spices, pickled onions and green chile. Just the right amount of spices and flavor. Side of grits. I’m not a grits person at all, but these were delicious. Don’t miss Paradigm in your rotation or make it your regular brunch location. We will return.
