The Gibson Room x Miami Slice Hospitality Residency
Coral Way’s beloved neighborhood bar, The Gibson Room, is embarking on an exciting new chapter. In partnership with Miami Slice Hospitality—the team behind local favorites like Slice Bar, Tina, and La Latina—the Shenandoah staple will launch a culinary residency.
This collaboration between friends (Ariete Hospitality Group and Miami Slice) brings a fresh, energetic twist to the classic venue. Guests can expect Miami Slice’s best-selling pizzas and a new take on the bar’s burger, while cherished staples like The Gibson Room’s signature flan remain.

We visited the newest version of the Gibson Room. The atmosphere is sophisticated and the service is excellent. They played good music and its a lovely spot. They have a good happy hour. They have a limited menu featuring burgers, and Miami slice pizza, a steak and some appetizers. All were nicely prepared. The cocktails were very good as well. It’s nice to have a cozy New York style lounge in Miami. Only thing i would recommend is a better selection of wines. Give it a try.

If I wanted Miami Slice—I would GO to Miami Slice. I am respectfully giving the gibson room this rating because it has stepped away from what made it a truly wonderful and worthwhile restaurant. I just don’t understand why it’s taken a turn to attempt at being a sort of high end sports bar with a limited menu when it previously had such a distinct and elegant atmosphere and menu. Before this switch, I recommended the restaurant to anyone who loved live music (especially amazing jazz), unique and well balanced drinks, as well as amazing food you can only get at a place like Aríete.
It has lost what made it worth the time and money. This is like the TikTok-ification of the gibson room—trying to go viral on Miami food bloggers’s accounts at the expense of its integrity and individuality as a restaurant. Miami absolutely did not need another mid-tier restaurant serving bar food. And the price is still the exact same as when it had its creative and romantic dishes. So disappointing to wait for your favorite place to come back only to realize it’s simply NOT the same restaurant. Should’ve just gotten rid of the name if the entire concept and vibe was being thrown out the window.

Vibey place, casual, delicious food and most importantly great service. My boyfriend and I had people constantly taking care of the table, super friendly. We had the wedge salad, the bacon burger and then pepperoni pizza. Oh my god. Let me tell you… the flavor was crazy good. Highly recommend. Will be back

A decent date night spot with a cute, romantic interior and live music, perfect for a laid-back evening. Their happy hour is a highlight, especially for the charcuterie board, which is a better value than the rest of the menu. While the salad was just okay and the mezzaluna pasta a bit underwhelming, the schnitzel stood out—tender, flavorful, and well-prepared. Service was fine overall, but I wish the dishes were served one at a time instead of all at once.

I used to truly love this place. It was once a space with a strong identity, great live music, a thoughtful menu, and desserts that stayed with you long after the night ended (that Datil toffee caramel was genuinely special).
On my recent visit, it felt like a completely different bar. The live music is gone, and the menu has been simplified to pizza and burgers. While there’s nothing wrong with those options, it was disappointing to see such a distinctive culinary and cultural offering replaced by something so common. What once felt curated and intentional now feels interchangeable with many other spots in the city.
I know restaurants evolve, and change is part of the industry, especially considering it was previously run by Ariete Hospitality, which set a very high bar. That’s likely why the shift feels so noticeable. I just miss what made this place stand out.
I’m sharing this with respect, and with the hope that some of that original spirit, music, creativity, and bold flavors might find its way back. Miami needs places with soul, not just another bar.

Cool place with great vibes. Got very busy around the bar area during Happy Hour and later on a Jazz Band was setting up to play. Great drink selection and nice assortment of foods to pair your drinks with. Would have liked to have a few more vegan or vegetarian options to choose from is my only issue. Very dog friendly and with its muted lighting and ambiance its definitely a great place for a romantic relaxing date night.

The ambiance at The Gibson is pure magic—it transports you out of Miami and into a cozy jazz bar. No neon signs or trendy gimmicks, just an intimate, sophisticated vibe. We sat at the bar and were promptly greeted by Phil, our fantastic bartender. The drinks were textbook perfection, expertly crafted, and balanced. The food? Absolutely delicious! The oysters and bone marrow are a must-try. If you’re looking for top-notch cocktails, flavorful bites, and a welcoming atmosphere, The Gibson Miami is a hidden gem you don’t want to miss. What a charming restaurant, David and Sebastian hospitality went above and beyond. Plus David makes some amazing cocktails. The smash burger reminds me of a Perfect In-N-Out. Croquettes with the Pear Apple chutney was absolutely delicious. Definitely a in the Miami area. Looking forward to going back already!

The food in this place is incredible. I still cannot believe a bar can have food this amazing worthy of a Michelin Star restaurant.
Chef Michael Beltran is simply a genius in my opinion! More people need to know about the Gibson and that they not only have great live music and great cocktails but that also you can have dinner here and eat better than in a lot of fancy restaurants around Miami.
