I had the smoked brisket, mac & cheese, and beans for sides and everything was fantastic. Their **homemade pickled jalapeños** were absolutely amazing; they added the perfect kick without overpowering the flavors.
But the real standout was the **brisket**. Honestly, it was the **best meat I’ve ever eaten** incredibly tender, smoky, and full of juicy flavor.
The owner’s family was super sweet and incredibly nice, which made the whole experience even better.
We loved it so much that we ordered extra for take-out. Even after driving back to Denver and eating it cold, the food was **STILL AMAZING**

My family and I stopped at this food truck on our way to Eagle County Airport. We didn’t have time for a sit-down restaurant and decided to give this food truck a shot. Well, let me tell you…I didn’t expect the food to be this good. We got a brisket sandwich, pulled pork sandwich and chicken wings. Everything was FANTASTIC. I can honestly say the chicken wings were the best I’ve ever had. The sandwiches were also outstanding. The owner was very friendly but yet very modest. I live in Connecticut, but will definitely stop there again if I’m in town.

If you think this is JUST A FOOD TRUCK… then keep on truckin’ It’s the best BBQ in the state of Colorado…I SAID WHAT I SAID! The best! I would love to share pics… which I will when we pass back through cause we WILL be stopping again! Rhonda is just the bees knees and when she suggests the wings…. Just GET THE WINGS! We also had the pulled pork and the pulled ribs, Mac and cheese and green beans. Everything delicious! She suggested that we go see Whisky Ben at the 10th Mountain distillery, what an amazing lunch stop on our way to Glenwood. Absolutely the best place to stop for great food and a great experience.

We arrived in an RV with only 20 minutes to spare, and The Full Belly truly delivered! Like any true BBQ place, they ran out of all the meat I wanted by close, but what they did serve up was amazingly delicious. The pulled pork’s aromatics came through in every bite. The bark on the brisket was seasoned to perfection. Everything was moist! And the jalapeno sausages kicked the flavor profile into full gear.

I ordered the pulled pork it was absolutely amazing. Tender, juicy, flavorful. They make their sauce with 10th Mountain Whiskey. I came up to them after I ate my sandwich to tell them “great job” and they offered me a taste of the brisket, which was even better than the pulled pork. Highly recommend.

I was walking from the little shell station to the local restaurant and happend across this little gem of a BBQ Trailer. The haft rack of ribs was some of the best I’ve had in a long time at a very reasonable price. She had a awesome bbq sauce(made with some of the local distillery’s product). And if you get a chance stop in at the 10th Mountain Distillery and sample some of their spirits too. Small businesses are the best! As a Truck Driver I remember the spots to hit for years. I will be back any time I’m thru here and they are open!

I love some good BBQ and Full Belly does not disappoint!! Best wings in all of Eagle County- they fall right off the bone with the best smoked flavor! I have yet to try something I didn’t want to come back for again! Cherry on top- you can grab a beverage from the 10th Mountain Distillery while you enjoy delicious meats!!
