Been going here for years until they finally got their own space! My favorite menu item is definitely the green chili fries I start missing then after a while but their burgers are top notch! The toppings they come up with will change the way you enjoy burgers like arugula and avocado! Also the hillside, I will never eat a grilled cheese without roasted red peppers and pesto ever again!! Happy to have a vegan spot to get to enjoy a good meal!

First time at their new place and it is amazing! Food as always great. Tried the new Jackfruit sandwich and the Indoor Kid to share. Also fried mushroom strips. New setting is beautiful inside (even the bathrooms)! Great decor.

Delicious!!! Cauliflower wings were delicious – unexpectedly crispy, delightful! We tried them with both the buffalo and bbq sauces, along with the dill / vegan ranch dipping sauce (buffalo our fav combo) yum!! And the Captain Jack (jackfruit) with aoili slaw on a delicious bun – this place has no stops on quality!! – with side of miso broccoli, and a Pueblo burger on gf bun with french fries and a little spread of all their diffrrent french fry dipping sauces!! Delicious, fixed my protein craving without the beef, youd never know! Im excited to try the marinated portobello burger next time!! And for drinks we had a coconut pineapple kava, which was wonderful for calming my nerves after a hectic day. The Cutting Board we will be back the next time we come thru Pueblo, you just made Pueblo a stopping point on our way thru Colorado. Places like these are rare and precious. Thank you for making delicious vegan foods accessible and made with so so so much love!!!

Limitless Transport
I’m a truck driver that travels a lot but still eats vegan when I do. I was happy to see that they had one Vegan Restaurant here in Pueblo. It was a food hall very unsuspecting… But oh my God the food is amazing. I got there a little bit early, so my food wasn’t ready yet however they made sure that they made every single thing in there with love, I believe they made some stuff from scratch. I just ordered a sandwich with the side of the broccoli and two types of fries and I’m mad that I didn’t order sandwiches because the sand did not make it. .. It was so good I had to look at it twice lol! The People were super friendly And I can tell that they really cared about what they do. I definitely tasted the love and the food and I will be coming back every single time I go to Pueblo. Thank you guys for existing and I wish you guys well. I hope you prosper and expand with your own standalone spot or even multiple places. If I can give you more stars, I would. I was not expecting the food to taste that good lol. I can tell you guys don’t take any shortcuts with ingredients. Thank you for making my food fresh. I would highly recommend this place. And they did not pay me for this review .Lol

Delicious vegan food, the people were nice, and it was quick too! I got the hillside with fries and my boyfriend got the nachos, we shared some and both were really good. It was a lot so we brought the leftovers back and they were kind enough to give us a box. The place is kind of like a food court with a couple different restaurants and a bar thing where you can get water and condiments. It was pretty cool and good vibes there. Definitely recommend.

I had a wonderful experience! We were visiting Pueblo for the day, and I was so happy that there was a vegan restaurant to try in town. The owner was friendly and gave me a lovely recommendation. The Mountainside sandwich and miso broccoli were super delicious.

Ordered the buffalo cauliflower wings and green chili nachos. Great buffalo flavor and delicious sauce. The refried beans and vegan sour cream on the nachos was super flavorful and creamy. The employee I talked to said they are building their own independent location right now. For now they operate inside the Fuel and Iron Food Hall with lots of shops and a communal eating area.

The Pueblo Burger they serve there has replaced my favorite burger. My favorite burger was beef as well, to anyone who thinks plant based food will always taste odd or never as good as the food we traditionally see it as, let the Pueblo burger they serve here prove you wrong. I have yet to try anything else on the menu but the Pueblo burger is such a magnificently balanced bite that I don’t know if I can ever get anything else.

All I can say is WOW!!! I live out of state and have been looking forward to trying this restaurant for well over a year and was finally able to make a visit happen!
I am by no means a vegan, but I definitely enjoy vegan style foods and The Cutting Board did not disappoint!
I tried the Indoor Kid and was blown away at how much flavor this sandwich had and the hearty portobello mushroom gave it a great texture, a solid 10/10 for this dish! Wish I hadn’t gotten so full or I would have ordered a second one!
I also had a side of their green chili which had all the flavors I remember as a kid growing up in Pueblo! Family got the green chili nachos and there was none left, so they must have been delicious!
They don’t market themselves as a “healthy” restaurant but that didn’t bother me! If you know how to eat clean you can still order a clean meal! The super bowl and cucumber quiona wrap can be made for those looking for a cleaner option!
The owner’s, Chad and Jennifer, were super rad too! They took the time to explain their dishes and how they make pretty much everything from scratch, even their chili powder is made in-house! Real food, fresh ingredients, made with passion you can’t go wrong!
I will definitely eat here again the next time I’m in town and I HIGHLY RECOMMEND trying this place!
