First the counter server was friendly and efficient. The problem was when she told me that they were closing and I asked if ivcould eat it at a table, she responded that I could and within maybe 3 to 5 minutes I was told to leave. I do not eat food in a car so it all went into the trash. I have never been kicked out of a restaurant before. I have visited for business literally over 1,000 restaurants of all sizes and have never been kicked out before. This is a very unique policy and one that the customer should understand, you will not be allowed to finish, just leave. It is good they have such a large trash can.

This is a diner style, grab a table or sit at the counter type of restaurant. This chili isn’t for everyone but we’ve been coming here over 20 years. We love it!! People refer to it as Springfield Illinois Tavern chili, it’s meat and beans and juice. No tomatoes, no onions, just finely ground meat, beans and spices.

Your bowl is put together when you order it. Your meat is kept separate containers by heat level and the beans and broth are in another. That’s how you get your perfect heat level, oil or no oil, soupy or thick.

I order mine, medium with a double touch of hot, hold the oil, and light beans. I like my chili a little brothy. If you want thick, spoon stands up in the bowl chili, just order your heat level.
You must say hold the oil or it will be floating on top.

I would ignore the older reviews, there was a time when the chili was not as good. The new owners have it down and it’s back to the good old days.

Long time/long distance customer of this awesome true chili parlor! Consistently made the same by Marion or one of the other friendly staff/owner w/pride & care…specific to what you order! My usual is a bowl of Med w/Touch light oil/light bean, with a plain hot dog, white milk, water, & plenty of oyster crackers! Best chili anywhere!

It is an absolute joy to eat at the Chili Parlor. The food is great, the owner and employees are very friendly and enjoy talking with every customer. Sometimes, even like you are family, I call the owner, Dad, he has a great sense of humor. The chili is awesome, as it has been for decades and always goes good with a chiliburger, with pickle, onions, and mustard. This chili burger was made perfectly. Good food, Good company, Good God, go eat some, I like it hot, but give that firebrand a try and put your name on the wall.

Easily the best chili ever. And you can have the area’s best chili with the level of heat and amount of beans you want.

One caveat – We carried out from The Chili Parlor this past Saturday. Our order never varies. Two pints, light beans, light oil, one pint medium, one pint medium touch of hot. When we got them home, one had a lot of beans and the other was just straight bean soup. As if we’d asked them to give us all beans, no meat. We’re not certain if this due to the recent change in ownership or a mixup. We’ll definitely be back. If we have to pay extra to get what we want, we’ll happily pay it. Too good to give up.
