Didn’t disappoint at all. Food was amazing. Sliced beef and chicken plate was tender and smoked really well. Sauce was thick and sticky. Just the way I like it. Baked potato salad was delicious. Beans were pretty basic and didn’t care for Cole slaw. Even eating in everything was packed to go?? No sauce or beverages available for self serve. Despite those negatives I would 100% go again. Great food!! Hidden gem in Willis.

Texas Barbecue off 8:30 is a hidden gem that deserves every bit of praise it gets—and then some. From the moment you pull up, you know you’re about to experience something special. It’s a small, no-frills place, but the flavor and quality are off the charts.
Let’s talk about the jalapeño chicken—it’s to die for. Juicy, perfectly seasoned, with just the right kick of heat. The brisket? Melt-in-your-mouth magic. I swear, if I could take home a truckload, I’d never leave my house again. Every bite is smoked to perfection, full of that rich, smoky depth you can only get from pitmasters who know what they’re doing.
The portions are generous, the sauce is next-level, and the service is just as warm as the food. Everyone here is friendly, helpful, and passionate about what they do. The atmosphere is cozy and clean, and you can feel the love poured into every plate.
Be warned though—they’re not always open, and when they are, there’s usually a line out the door. And for good reason! This place sells out fast, so don’t sleep on it. Get there early, grab your spot in line, and prepare to be blown away.
Whether you’re a BBQ connoisseur or just someone who loves good food, this place is a must-visit. 10/10, no notes, just go.
Good part – the sides were very solid & would definitely order again. Bad part – everything else. The brisket tasted like a thanksgiving roast, not nearly what true Texas brisket should be. The ribs were halfway decent, but nothing super memorable.
I waited a while to write this review because I didn’t want to be truthful, but I feel I was doing a disservice.
This is definitely a one and day restaurant, in my own opinion. I wish them the best!
In fact, they were so dry that it would have been tough to work through them, but they were saved by liberal application of their outstanding barbecue sauce.
As with other reviewers, I found little to no smoke flavor, but at least the meats were cooked properly and very tender. However, you shouldn’t have to depend on the sauce to enjoy good barbecue.
For the sides, the coleslaw was quite ordinary but the potato salad was excellent.
It’s a tiny dining room – classic barbecue shed and kind of perfect. There was no visible restroom but wet wipes are on every table.
Based on the very high ratings I may have caught them on and off day or maybe just too late to get moist meats. This is clearly a neighborhood favorite and the steady stream of diners and take out orders support that.
Finding good barbecue in this part of town is tough, and based on what I was served I would not return. I would drive the extra 30 minutes and hit Bar A in Montgomery. That’s a whole different level.
