Tacos La Cora is a very good pop-up taco stand! Good prices and really good food. We stopped by today to try it for the first time and are impressed. We tried three different taquitos (street tacos) and a Quesadilla Sencilla (cheese quesadilla). I really enjoyed the quesabirria taco. The meat was juicy, tender, and flavorful. The cheese is melted between the two corn tortillas and the outer tortilla is crispy on the outside for a pleasing little crunch. The Pierna Horneada (pork carnitas) was one of the best carnitas tacos I’ve had in awhile. The roasted cubes of pork were tender, flavorful and a little crispy on the outside without being dry inside. Just like I like my carnitas. The carne asada taco was solid. The quesadilla was very tasty too. Golden and crispy on the outside, done just right, with a generous amount of soft melted cheese on the inside. Crispy, cheesy, and delicious. We are definitely going to be coming back to this roadside taco stand.
