In 2011, newlyweds José Carlos Cornejo and Pilar Esparza started an exciting new chapter, moving from Aguascalientes, Mexico, to Oklahoma. With lots of experience in hospitality, they decided to follow their dreams and start their own business. José, inspired by his mother’s cooking, and Pilar, a third-generation restaurant owner from Calvillo, Aguascalientes, combined their skills and love for serving others. In June 2022, they launched Taco Empire the Foodtruck, offering a simple menu specializing in tacos with blue corn tortillas. The food was good and definitely hit the spot for lunch. The service was great. A little pricier than expected (if complimentary chips a salsa was provided the price would be right in line), but no complaints on taste. The only real glaring issue was how hot it was inside which sounded like a common occurrence, not the best setup for dine-in, especially during summer. That aspect alone might keep me from coming back when it’s this warm out. I give it a 4 based on the overall experience, taste alone a 5. I would consider going back if I wasn’t willing to drive further.

I finally stopped in for takeout at Taco Empire after passing by it so many times, and I’m glad I did. My girlfriend and I both got the steak burrito along with a small chips and queso, which actually turned out to be more than enough for two people. The chips were the standout—super thick and crunchy, way better than what I’m used to. They were a little salty, but honestly so good you could snack on them plain. The queso was also great, though there were definitely more chips than dip. As for the steak burrito, it started off a bit drier than I’d hoped—probably would’ve been better with one of the sauces they offered, so I’ll definitely grab salsa next time. That said, the flavor built as I went, and the steak itself was delicious. What really pulled it together was the cheese—perfectly melted with a great taste that brought the whole thing to life. Overall, I’d absolutely go back to try more from the menu and definitely get more of those chips.

Can’t say enought good things about Taco Empire! We had their Dip Trio, which was incredible and we had lots to take home + extra chips! I had the steak salad bowl and it was a very generous serving size, very delicious!! My husband got the pastor torta and an adobado taco, both of which he had great things to say about. The horchata was tasty as well. Our food was brought out very quick and all the employees were attentive and helpful.

I had the quesabirria tacos AND THESE ARE TOO GOOD!!! Along with the food the hospitality is top tier! I live over an hour away and I will surely be making a few trips back with my family!

I wasn’t impressed honestly. The food was okay and the price was high. I wasn’t a fan of the chips- too thick, greasy and no salt. Salsa was decent. Had the steak taco and fried fish taco. The best part was probably the fried potato and I’d order a box of those. Atmosphere was simple and did have a bar. Would not go back.

Stoped into their new brick and mortar location yesterday afternoon for lunch. Started off with the chips & queso as an appetizer which was very good! The birria tacos were very good as well as the tamales! Definitely a good little spot to try in the area. Service was pretty good it’s not really table service as you order at the front counter but they will do bring the food to your table. Overall a good experience.
