Michelin-starred Soseki, or cornerstone in Japanese, is an intimate 10-seat multi-course dining experience featuring a modern take on omakase by Chef Michael Collantes. It’s a “chef’s choice” dinner exploring our local Florida producers through our partnerships with farmers, fishermen, and artisans. Our team has curated a global sake and wine program to accentuate the dishes and also challenge the traditional concept of beverage pairings. As we near our fifth year, we’re entering a new phase inspired by Shoshin, the Japanese idea of “beginner’s mind.” It’s about staying open, curious, and excited no matter how much we’ve learned.

My husband and I traveled from St. Louis to Florida to visit the Space Coast, and we chose Soseki as our premier dining experience for the trip. While the evening didn’t unfold as we had hoped, it became unforgettable for reasons that speak volumes about both the cuisine and the people behind it.
My husband fell ill the day before our reservation (upset stomach) and was unable to participate in the omakase experience we had booked. From the moment the staff realized what was happening, they treated us with extraordinary kindness and grace. They ensured my husband was as comfortable as possible throughout the evening and even went so far as to brew him Tulsi basil tea to help soothe his stomach. This level of thoughtfulness and care was completely unexpected and deeply appreciated.
As for the food: the omakase was nothing short of exceptional. Every course was precise, inventive, and beautifully balanced. It was an experience that fully lives up to its Michelin star, and then some.
While we couldn’t share the experience together as planned, the compassion and professionalism shown by the team turned what could have been a stressful and uncomfortable night into one we will always remember fondly. True hospitality isn’t just about what’s on the plate – it’s about how guests are treated when things don’t go according to plan. Soseki excelled on every level. Thank you.
The food was simply fantastic for all your senses. We further elevated the experience with fresh truffles from Italy, A5 Wagyu beef, and the Voyager wine pairing.
Shout out to the team, Tony, Gama, Nick, Lexi, Matthew, Colin, Jordan, Vanessa and Leila.
Please be aware this is a special experience and it is very very very expensive. Highest recommendation.
I sincerely hope they get a second star because to me this is tied with Victoria and Albert’s as the best Michelin restaurant in Orlando. All the others were simply a really good meal. Those two are absolutely on another level.
Also shout out to the tea pairing as a magical, fun, unique non-alcoholic pairing option! Usually I feel like if you don’t want alcohol you are left without anything creative. Not here!
And of course the service and interactions with the chefs were impeccable. If you can afford the hefty price tag, it is well worth it!
Overall I would say this experience is a must try. I don’t have a specific favorite dish since they were amazing in their own right. I’ll definitely come back in the future when I’m town. Also finding out they recently received a Michelin star made total sense now. Wouldn’t be surprised if they got another after seeing the passion they put into every dish prepared.
