​I had an amazing experience at Solar Roast Coffee in downtown Pueblo. The coffee is smooth and rich, and the white chocolate mocha was hands down one of the best I’ve ever had.
​You also have to try the food—the sausage breakfast burrito was absolutely delicious and hit the spot. Great vibes and even better coffee. Highly recommend stopping by if you are in the area!

Great fresh beans, and such a unique way of roasting them.
Sadly I have to order online and get the beans sent halfway across the world to enjoy them, at least I have the cup! A little taste of a good place.

Beautiful place and people. The coffee was amazing, if you are like me into Middle American Style coffee with some chili. You have to try the Pueblo Mocha (strong, slightly bitter dark chocolate, cinnamon and chili mixed with a prominent but not dominant smooth espresso).
It is spicy, dont get me wrong but worth it very much. This is the kind of coffee place that becomes your go-to when you live close by.

Time/date: 10:27 am-02/22/2026, I always always come here never an ounce of rudeness and they have the best food+drink items, today was different I don’t know if they are new I don’t know it’s not an excuse but two girls named Scarlett and Abby were so so rude they were very very miserable and I don’t appreciate it those two make service here look awful!! I have bad days too but I don’t walk around with rudeness and unkindness. From someone who used to work customer service if you realized whether you fake a smile or just act kind your day goes by smoother and the customer will appreciate that where when you are mean and frowning of course your day is not going to feel the best… I’ve always said if I am having a bad day leave it out the front door in my workplaces and later on I can come back to it, people do not deserve a rude tone and demeanor just because I’m not feeling my brightest that day. Do better be kinder

Solar powered coffee!

During a 6 hour drive from Denver to Santa Fe, I asked Cassey if we could get some coffee since I was ready for some caffeine. We were in-between towns and Pueblo was the next one coming up so I got to googling and yelping real quick to see what was approaching. Solar Roast Coffee was the ideal candidate as it was just a bit off the interstate and it wouldn’t delay us too long.

We pulled off the highway and grabbed an open spot a block up the road from the coffeehouse. Its hard to miss Solar Roast due to the vibrant colors and giant painted wall. We walked in to a friendly and welcoming atmosphere and were quickly greeted by the barista behind the counter. While Cassey was asking a few questions, I was oogling over the baked goods in the display case and scoping out there stickers available for purchase.

I don’t remember what Cassey got but I got my usual americano and a snickerdoodle cookie. We decided to take a stroll around the area while we enjoyed stretching our legs and being out of the car for a few minutes. In this area of Pueblo, it seemed like a dying area held up by a few big businesses like Solar Roast but we felt safe since it was about 11am when we stopped in.

The americano I got was pretty good! Its just espresso and water so it’s not too hard to make wrong but doesn’t leave a lot of room for flavor being added. Cassey said her latte was pretty good. I saved the cookie for the rest of the drive and it was gone about 2 hours later. It was good, too, if a bit light on the snickerdoodle flavor but that could be a regional difference.

When going to type up this blog, I learned Solar Roast Coffee gets their coffee from roasters who use solar power. In this day and age of climate change, its really cool to have been able to support a business who is going against trends to bring us some cleanly grown coffee.

If you find yourself in Pueblo and need coffee, Solar Roast is the place to go and helps keep your coffee consumption as green as possible.

Really neat place in downtown Pueblo. The food, a bagel, was very good. The strawberry gratis (sp?) was nice. I had a pour over coffee. Bit weak for my taste but is was well prepared. The staff were great and the place was busy with locals. Always a good sign
