Staff was super friendly and everything was fantastic. This is one of the most underrated BBQ places I’ve visited based on the recent TM Top 50 list. This was right up there with the best I’ve had in Texas. Brisket boudin sausage was absolutely fantastic, as was the serrano cheddar sausage.
As a bonus, they’re just a block or two away from a local brewery and downtown Sulphur Springs.
We’ll definitely make the hour+ drive again and will come earlier next time!
I have mixed feelings about our time at Slaughter’s BBQ. The atmosphere wasn’t my favorite – people were cutting in line and “holding” tables with their things while they were still in line, preventing people with food from getting a table.
The restaurant was very clean and the staff was friendly! The menu was a little hard to read but once you get close you are able to read it!
Now about the food! The pork ribs were my favorite thing we ordered. They weren’t too sweet and had a good texture. The brisket was good but pretty tough. The mac and cheese was also good, but didn’t blow me away.
Overall, I’m not sure I’ll be back but I enjoyed the lunch nonetheless.
When I tell you, if you get there at a specific time, they could be out of meat so be sure to get there before noon if possible but no promises.
It was good, including the sides we had.
I would recommend you stop in and have a brisket sandwich and try their Mexican corn.
I took a picture after the fact I already took a bite but obviously I was starving.

Tater casserole was full of flavor. I heard them mention jalapeño cole slaw
while I was in line. Hadda try it. Not hot and tasted great. They put cilantro in it as well. Very unique.
My favorite part of my meal was the chicken marsala boudin. It stands out head and shoulders above any other boudin I’ve had anywhere. All the other boudin I’ve had before, shouldn’t even be called boudin because it’s not even close.

Got Brisket, Turkey, Brisket Boudin, Serrano Cheddar Sausage, Charro Beans, Tatertot Casserole, and Potato Salad.
Brisket: 10/10 – great bark, pepper forward rub, well trimmed, perfectly rendered fat, overall tender and moist. This is a can’t miss item.
Turkey: 7/10 – incredibly moist but not quite fork tender. Hard to do with turkey. The rub is also a knock for me, with a sweet forward flavor. Subjectively, I’d like a classic salt/pepper with notes of savory over sweet.
Boudin: 9/10 – wasn’t exactly sure what this was when I showed up but the line was raving about it. Thankful I tried this. Well balanced flavors, perfectly cooked. Would order again.
Serrano Cheddar Sausage: 6/10 – don’t get me wrong, it was good but left a lot to be desired. If my sausage says it has cheese in it, I want to see and taste bits of it as I chew. Heat level could be cranked up a touch as well. Good sausage with a blend to make the masses happy but not special.
Charro Beans: 10/10 – don’t sleep on these. Incredible texture and flavor profile with some welcomed heat to it. Wish I got a large.
Tattertot Casserole: 8/10 – a fun, solid side choice that complemented any protein bite on the tray.
Potato Salad: no rating from me. I simply don’t like potato salads, this was for my wife.
Pickles, Onions, and Bread. Yes please!
I really appreciate that, especially given the fact that they were still having influxes of customers here and there. Just speaks to the overall hospitality of the owner and the people working there. They all seem like a family working there more less working there and I believe in any restaurant this will show in the food and the customer service.
Side note, their smoked turkey was probably the best smoked turkey I’ve ever had. The brisket boudin had a great smokey flavor and I’m not even a big fan of boudin.
