At The Skirted Heifer, we’re not just another burger joint — we do things differently: Grass-Fed Beef, Always Fresh: Our burgers are made with 100% Colorado-raised, grass-fed, grass-finished beef. The Famous Cheese Skirt: We’re known for our signature “skirted” burger — seared with a crispy halo of grilled cheddar cheese. It’s not a gimmick. It’s a game-changer. House-Made Everything: From our buns to our sauces, we make it all in-house. No shortcuts. No bottled junk. Local & Sustainable: We support Colorado farms and local businesses because we care where our food comes from — and you should too. Real People. Real Food. No BS: No corporate scripts or cookie-cutter menus. Just good people making damn good burgers.

This has got to be one of the best burgers in CS. It’s so tasty! The cheese, I mean THE CHEESE is such a stable of the menu items here. Absolutely get your burger “skirted”, which is melted cheese down the sides. It’s such a nice flavorful touch. The ingredients all seem fresh and the burger patty is perfectly seasoned. This is one of our new favorites!

Do you see this burger? Look at that cheese! LOOK. AT. IT. It’s so good. The burgers on their own are top notch, but they also at this huge skirt of cheddar that’s almost a side dish unto itself. They have a lot of varieties of burgers or you can customize your own. The fries are well-seasoned with just the right amount crispness, although the ones at the bottom of the pile got a little soggy from burger juices. The sodas are also really tasty. I like mixing the cherry and cream sodas together.

“Dirty, Juicy, and Just Right”

If you find yourself in Colorado Springs with a hangover the size of Pike’s Peak—or maybe just a deep craving for something real—walk into Skirted Heifer. It doesn’t pretend. It doesn’t pose. It just throws down one hell of a burger with a cheese skirt that’s crisped to golden perfection like it’s been kissed by the gods of griddle grease.

The place feels like a joint from a better time. Local, loud, a little unhinged. The kind of place where you wipe your hands on your jeans, not linen. They’re grinding their own beef and fermenting their pickles like mad geniuses—because they care. You taste it.

The fries? Hand-cut. The fry sauce? Witchcraft. The vibe? Somewhere between punk rock diner and sustainable utopia.

Is it perfect? No. The line’s too long, the tables too few, and if you’re looking for a kale smoothie, go somewhere else, you beautiful idiot. But if you want a burger that remembers what burgers are supposed to be—messy, glorious, a little dangerous—Skirted Heifer delivers.

Four stars. Would lose sleep for it again.

The Hangover Burger was pretty delicious. I got it with the sauce on the side and tasted the burger without it first then liked it so much as is that I never added the sauce to it. The sweet potato fries were the perfect texture and had just the right amount of salt on them. Yum! We will be back!

Cool restaurant when you eat here. Order delivery and it’s absolutely trash. I ordered a plain burger because I simply refuse to eat slimy toppings on a burger delivered. The ticket shows what I ordered, and the burger was COMPLETELY WRONG. It even had all the topping on it that I did not order, and they came slimy and gross. The quality of the lettuce and tomatoes at this place will quite literally make you sick. Wouldn’t recommend this place they can’t respect you enough as a customer to get your order right.

It is so good! The food was fresh and the burger was cooked to perfection. I have recommended so many people to come here! You have to try this place and the price is reasonable!

I’ve never had a restaurant mess up every single item in an order before.

The burgers had no flavor and were soaked in grease. Toppings missing all together on one.

Fries were burnt and missing accompanying sauces.

They gave us the wrong ice cream sandwich and it was thrown in the bag and melted. I’m not sure how as the food was cold.

To top it off there was a hair in the food.

So gross and a pricey disappointment. Definitely won’t be back & do not recommend. Don’t understand the hype- this place is terrible.

I have been wanting to try the Skirted Heifer for a couple of years and finally went today. The place was a lot smaller than I thought it would be and the tables a lot closer than I like. There was only one table open for my party of 4. Ordering was easy and the person taking orders friendly and helpful. The burger meat itself was very good but very greasy and very messy. I liked the focaccia bun but others in my party found it too garlicky. Both the belgian and sweet potato fries were good. We didn’t care for any of the cane sugar drinks – they tasted like soda water with a little flavoring. Overall, it was an OK meal but not one I would return for.
