Coming from the Amazon, we were craving some fresh sushi. But there was not really anything worthwhile in the old city center which encouraged us to seek further afield.
And thank goodness we did!!

Shibumi is a delight and surprise – in a sea of overly cheesed or cooked sushi around the world, Shobumi is a testament to the art of traditional sushi with a chefs twist and Ecuadorian influence. We tried one of the set menus and were blown away by the quality of the fish, the clean citrus flavors and variety.

Coming from NYC and eating sushi at least once a week, this holds up among some of the best out there – highly recommend.

My girlfriend and I had an incredible omakase experience at Shibumi. Incredibly fresh, locally sourced fish that is prepared and plated to perfection. Each course, especially the marlin, offered unique flavors, and the Pacific mackerel was so tender it almost made me fall out of my chair – its texture emulsifies in your mouth, creating an incredible depth of flavor. Even the non-sushi dishes, including the soup, flan, and desserts, were exceptionally well-executed. I was referred to Shibumi by a regular, and I am extremely grateful for his recommendation of this magical place. The service is outstanding, the decor is timeless, and everything is kept simple, staying true to the essence of Shibumi.

The food is really great and the service as well. The best sushi I’ve ever had in Ecuador. We can still get our table without a reservation but making reservation beforehand is recommended.

I was a bit skeptical of having sushi in Ecuador but it was recommended by two of our local guides! The sushi was all amazing and fresh and they really make it their own with their take on sushi! It was very good and the restaurant itself is gorgeous!!

The Omakase 8-course tasting menu is a captivating adventure through surprising, diverse flavors and textures. My meal began with a soothing sea bass miso soup, which consisted of flamed wahoo garnished with a mixture of honey, orange, and ginger sauce. The shiso leaves provided the perfect touch.

Next up was the Sierra fish with its remarkable black truffle sauce. The wreckfish and red tuna, accompanied by shallots, followed suit, with the red tuna paired with martina red sake. Just when I thought the experience couldn’t get any better, the snapper arrives, flamed and slightly draped with creamy Camembert cheese. Then there was the salmon, offering a delightful twist with its roasted coffee terrain brandy sauce, which added an unexpected depth.

The sea bass jiaozi brought a zesty punch with its spicy Ponzu sauce and crunchy filling, and the Nigiri lineup was nothing short of exceptional. Whether the fiery kick from spicy oil paired with the salmon, the tanginess of the tangerine oil, or the satisfying crunch of the silver cracker with salmon eggs and fennel, it was abundantly clear that these were no ordinary sushi experiences.

The salty flan and Chawammu shi reset my palate for the vibrant red fish dish, which was elevated by mushrooms, chives, and oil. The Kaburi maki was fantastic and consisted of white fish, lemon, avocado, sweet corn, and roasted crunchy corn with a touch of Sriracha.

There were two servers, but regrettably, I didn’t catch the second person’s name. However, Andres provided exceptional assistance throughout my dining experience.

And to top it all off, the lemon bourbon ice cream was the kind of dessert that left you yearning for more, making this culinary journey truly unforgettable.

Very yummy sushi! I appreciate the more authentic sushi compared to other places we have tried in Quito. Very nice atmosphere and perfect date spot. We ordered the nigiri special and 3 different rolls. I do not eat meat other than fish and they accommodated the nigiri pieces for us so that mine would not have the carne or foie gras. The nigiri was so so good. Highly recommend the Shibumi roll as well. Definitely worth it for the price – coming from Miami, this quality and these prices are hard to top!

Shibumi is a real treat! They have an a la carte menu but also have an omakase menu. I recommend opting for the omakase or mini omakase menu unless you already know what you want to eat. The omakase allows the chef to surprise your tastebuds with interesting taste and textural combinations. You can also ask for your menu to be geared towards a more specific direction. For example I personally prefer pesca blanca and so the chef really surprised us with a pesca blanca nigiri selection which featured super fun and exciting flavor profiles and different textural sensations.

The absolute best feature about Shibumi is that they really highlight the beauty of Ecuador’s local fish and it’s other unique ingredients. Service is outstanding and the servers take the time to showcase the unique elements of each dish. Come and spend a magical time at Shibumi and whatever you do…. Don’t leave without tasting the miramelindo sashimi. It’s like butter!!!

Small place but spectacular food and great service. I happened to go on the day they got delivery and I was able to see the fresh fish arrive.
During these Covid times, staff follows proper sanitation protocol, that made the experience the more enjoyable.

Prices are very reasonable considering you are paying for quality ingredients and food.

The owner and chef has a very deep understanding of the cuisine and uses his skills to create amazing and delicious plates. If you are ever in Quito and want to experience delicious food, do not hesitate to visit them.

The restaurant is located in a part of Quito that I had not yet been to before, it’s in a neighborhood with seemingly nothing else around it, which makes it seem like a hidden gem.

We ordered four rolls, a bottle of sake, and finished with a ginger crème brûlée. I loved the Kai roll most of all – which included apple and a white fish, that fresh citrus taste was to die for.

The Philly roll included smoked trout and dill, my second favorite. The softshell crab roll I’d pass on, because the crab was fried, I felt it to be a miss. I just didn’t like it. I was looking for the classic moist crab taste and once I realized that the crab was actually fried I realize that I actually don’t like this, almost tasted burnt.

The atmosphere is 10/10, next to me was a first date and also a large birthday/family gathering – suitable for all groups.
