We went for dinner for the first time last week and were completely blown away with how incredible everything was. You can definitely taste the quality of food they offer. I love that they use local ingredients for their dishes. Service was amazing, they were very attentive and friendly. Our dinner experience was so great we returned a few days later for breakfast. I ordered the frittata and my husband and I shared the bread pudding. Cannot recommend the bread pudding enough, we ate every single bite. Everything they serve is very well balanced. Their sweeter items for dessert and breakfast are not overly sweet which I love and appreciate. They truly know how to make the ingredients shine. I am already looking forward to our next meal there.

I’m in love with this restaurant!! The food is so amazing and blows me away every time, the food is fresh, flavorful, and rich, and everything in between. The lamb and mushroom kabobs are actually incredible, and the desserts and spectacular. It’s organic and natural (I think) and super high quality food. The bartenders are always really nice and informative and are so sweet when answering questions. The place is definitely small, with limited seating, and the menu is also a bit small and pricey. But regardless I love this place- and it never disappoints.

We had such a wonderful evening at Shavano! Chase really took care of us throughout the evening, giving us a wonderful recommendation for food to pair with our bottle off of their incredible wine list. We will most certainly be back and highly recommend the wine, the food and the service.

Great dining place for our small valley. Great family style dining, I just wish they had more vegan options. They are pretty accommodating but most of the options you could ask to “be vegan” would change completely or lack a stellar ingredient.
For vegetarians this place is great! And of course meat eaters.
Very good wine selection and excellent customer service.

Foodie delight! As we walked in I saw the trout and kebabs on a guest’s table and decided to have the trout for dinner! Sorry no pics. We were hungry and enjoying the moment. Service is great, food is top notch, great wine list and they offer a nice selection of beers, two cocktails (no liquor license), reasonably priced quality food.

I can’t say enough good things about Shavano and the team there. The building is super cool, the staff is both professional and familiar, and very knowledgeable about their offerings, and the kitchen is very accommodating to dietary restrictions. THE FOOD!!!!! I wish we had more food like this in this area… it is clean and uniquely seasoned and not overpriced. I’ve been amazed at how inexpensive the food is for what you are getting. Dinner and breakfast, alike, are utterly spectacular.

Date night early 5pm Dinner…full coursed with a manhattan and Italian red wine to accompany. The shishito peppers to start was a generous portion with the mains of a half chicken and the pasta special lobster tortillini and the broccolini and roasted bear sides. The service was phenomenal and to top it off the unique caramel desert was super yummy. Glad we visited hope to come back the next time we pass through Salida.

Absolutely phenomenal dining experience at Shavano.. so good I went twice in one weekend while visiting Salida!
As a self-proclaimed steak fiend, I have to say..the ribeye might just be the best steak I’ve ever had. Perfectly cooked, beautifully seasoned..it was just done right. The accompanying potatoes were a perfect match, and the spring salad was light and refreshing, balancing the richness of the steak.
On my second visit, I switched things up and had the chicken with the winter quinoa salad..also delicious! And I have to mention the pot de crème… absolutely divine. Rich, smooth, and the perfect way to end the meal.
Beyond the food, the atmosphere and service were impeccable. I sat at the bar on my first visit and was chatting happily with other guests within minutes. Same thing happened the second time..it’s that kind of place. The community vibe is strong, and the staff are warm, attentive, and clearly passionate.
All in all, an A+ experience. Wonderful food, great people, and a place that makes you feel right at home. I can’t wait to go back!

Simply a superb dining experience. This restaurant ranks among the best restaurants in Denver. Lovely old building and shaded outdoor dining.
Soft, elegant, thoughtful service. Flawlessly considerate and welcoming, always.
The food is consistently well prepared, beautifully presented and generously portioned.
Truly a special dining experience.
Thank you for bringing fine dining back to Salida!

We had dinner and breakfast at Shavano and were blown away both times (not just for mountain town standards, but dining out in general)— the meals were incredible and you could really taste the freshness of each ingredient. The atmosphere and service of the restaurant are wonderful. From the chef stopping to ask how our meal was to the enthusiasm of our wait staff, the passion for their craft was evident. The best dining experience(s) we’ve had in a very long time. We cannot wait to return and wishing them all of the success. Thank you!
