If you could distill the essence of the Pacific Northwest into one menu, it would be Shaker + Spear’s, a celebration of all things coastal. It’s all created with ample amounts of care and creativity by Executive Chef Gabriel Quintero, served in a visually striking setting where warm woods meet bold brass accents meet backlit bottles. The total package is cozy and inviting — seafood comfort food in a sleek atmosphere, if you will — exceptional enough to visit for a special occasion, welcoming enough to visit every day.
Chic eatery near the Kimpton Palladian Hotel, offering Pacific Northwest cuisine amid pale-wood decor.

The sides also deserve attention. The roasted potatoes and brussel sprouts arrived generously portioned, crisp at the edges and tender within, layered with deep, savory flavor. An interesting use of nuts added texture and nuance throughout the meal. The herby, citrus-forward focaccia with whipped butter was particularly memorable and is worth ordering on its own. We couldn’t finish everything, unfortunately.
Service struck the right balance. Attentive, efficient, and unobtrusive. A slightly unstable table at first seating was a minor misstep, quickly and graciously resolved with a nearby reseating. Overall, highly recommend dropping by for dinner.
The food was great, nice selection of mostly seafood entrees. The appetizers, entrees, cocktails, and desserts were all tasty.
Would definitely recommend this to anyone for a special occasion, and will try to come back when I’m in the area!
Our server, Hector, deserves special recognition. Despite the full house, he took amazing care of us — clearing plates right away, keeping our water glasses full, and always checking in at just the right moments. Honestly, his professionalism and attention to detail could be a model for service everywhere. It’s so rare to experience that level of care in the U.S., and he absolutely nailed it.
We started with oysters — fresh, flavorful, served with an excellent mignonette and a refreshing cucumber–celery–style chutney that was such a pleasant surprise. Then we had hamachi crudo with a peach-based sauce — light, fruity, perfectly balanced. Huge compliments to the chef for that one.
And the branzino… (full fried fish) what a showstopper! Crispy on the outside, juicy inside, seasoned to perfection — honestly one of the best fish dishes I’ve ever had in America.
I’ve already recommended Shaker + Spear to my friends, and I’ll definitely be coming back.
UPD: I’m coming here for the third time all the way from Olympia just for your fried whole fish. The branzino is still absolutely amazingly prepared — perfectly cooked and full of flavor.
And Hector is still outstanding. A true professional who explains all the new menu items clearly and is always attentive to every guest. Please give him a bonus — he’s wonderful.
Service and timing were the bigger issues. I ordered an espresso, but it came in a full-size mug because they were out of espresso cups, and it was already cold when it arrived. Our food took a while, and when it came out, it was cold as well. My poached egg on the avocado toast was cold, my son’s steamed milk was cold, and the sausage had hardened grease on it.
After the food arrived, we didn’t see our server for at least 10 minutes, so we just ate. My wife also ordered a second mimosa that seemed to be forgotten. When our server returned, she said they were waiting on a champagne glass because they were out. It was confusing given how empty the restaurant was for brunch.
I’m hoping this was just an off morning, but for Valentine’s weekend brunch at a Kimpton property, we expected a much better experience.
