Name a better way to end a terrible day off, than with a delicious wood fired pizza! Not particularly a good day at work, but when I came home to see Seb’s outside with a couple other food trucks, I was overjoyed! I got the Potato Pizza, and it was phenomenal. Everything was hot, fresh, and delicious. The addition of quality Brie cheese was the cherry on top! For being wood fired, they had it out of the oven fast! I will definitely be visiting again when they come back to Coal Creek Village for food truck Wednesdays. Thank you, Seb’s, for making my day a lot better!

I visit Seb’s regularly when they’re in Gunbarrel near Spine and 63rd. Excellent pizza, very fast, and organic. Prices are great for what you receive. The crust is fantastic, just the right amount of chew. The sauce is proportioned well and doesn’t take over nor get lost in other flavors. Everything tastes very fresh – the fresh tomatoes in particular are excellent (it can be hard to find good tomatoes on a pizza elsewhere!) I prefer the margarita pizza, but I always request that the basil be added after coming from the oven so it doesn’t get cooked. They are always happy to accommodate my request. I’ve tried quite a few places for pizza in the Boulder area but Seb’s is still one of my favorites!

Seb’s was outside my office on Pearl Street, super nice people, quick cooking, and the pizza tasted amazing. I’m simple and got the pepperoni, but the sauce was solid, just the right amount of cheese, and the dough was spot on, perfectly cooked on the bottom! Can’t wait to eat here again!

I eat Seb’s everyday Monday when they stop at our office in Boulder. I look forward to it every week. The pizza is great tasting and fairly priced. Great atmosphere and delicious pizza!!

My rating is one star, at least for the food quality. Other than that, my experience using Sebastian as a wedding caterer was very less than pleasing.
Communication was always delayed by days/week, he added extras to our finalized menu (and budget) during the wedding without discussion or approval, then harshly demanded payment on the spot from my dad and sister during the reception. He made false accusations about communicating changes and to this day (almost a year later), he will not resolve this issue.
I wish I can say more positive things because the food was great, but he is the only wedding vendor I had issues with. The uptick and blindsiding of the agreed budget came at a terrible financial time for my family and I, and we tried to be reasonable and professional. Unfortunately, I received nothing of the sort from him.

We ordered a pizza called “Seb’s Pizza” with chicken, white sauce, cheese, mushrooms and oregano. The pizza crust and particularly the chicken was EXTREMELY dry…we honestly couldn’t tell if they put on any white sauce. We figured since they forgot to top it with cheese, that they probably forgot the sauce, too.
When we spoke to the man in charge, he denied anything was wrong or missing. When asked if we could choose another flavor off the menu, he basically told us too bad….it was not his problem and we were turned away…completely shocked! We had to go back to our seats and eat that nasty dry pizza! I would never treat a customer the way he treated us! This restaurant owner has a very poor customer satisfaction policy!! His customers obviously don’t matter to him!!

Seb makes the best organic wood fired pizza I have ever had. I love the crust and sauce and my personal favorite is the “Med”. He is always extremely popular in the food truck line and I go every Monday night of the Summer in Prospect and am never disappointed! Thanks, Seb!
