Nestled just off I-35 on Central Ave in Belton, Schoepf’s BBQ welcomes you with a warm and inviting atmosphere. Schoepf’s BBQ was established in 1993, and purchased in August, 2007 by Ronnie & Staci Schoepf, from Ronnie’s parents.
Since purchasing the restaurant, Ronnie & Staci have completely restructured the business. From a revamped food menu, to a complete remodel of the location.
With the new look and feel, along with serving proprietary meats & prime brisket, they have turned Schoepf’s into a Central Texas must-visit location.
In addition, Schoepf’s BBQ has introduced live music to the Belton area with Schoepf’s Backyard in 2009 and it recently was awarded the Texas Country Music Award for “Live Music Venue of The Year”.
Brisket, chicken, ribs & more cooked over mesquite coals & served in a sprawling, ranch-style space.

I can understand why this place is so popular. The smell when you first walk in to place your order is amazing. You watch as the staff expertly cuts the meats and then you make your way to the dining area where you can choose sides if you want. The brisket tacos were and I ordered some brisket, street corn, and peach cobbler for when I got home. It’s not every day that I spend $60 at lunch but the food was amazing and I got dinner as well. You can definitely get a satisfying meal for cheaper here but I was in full send mode and only regret that I couldn’t try everything on the menu. Worth the trip from Copperas Cove definitely.

Outstanding BBQ with a Tex-Mex twist. Lots of choices you won’t find at your typical BBQ place. They also have the traditional meats as well. Really nice variety of sides whick you can get in different sizes.

Take the time to get off of I-35 when going through Belton. Skip all of the eating establishments on the Interstate and take a brief detour to downtown Belton. You will be glad and your tastebuds will be doing a happy dance for the remainder or the day.
Great real Texas BBQ (better than all the places that get all of the hype). Great food, great service and a meal that you will not forget.

Love the variety of BBQ offerings. The brisket tacos, grilled cheese brisket, and brisket nachos are all delicious! ❤️
The staff is friendly, and the place hosts fantastic love events.
And then there’s the street corn. Love, love, love the street corn! Cold slaw, potatoes, and desserts are tasty too.
One of my favorite BBQ spots.

Fridays brisket taco special was delicious! We also had some brisket queso, stellar. The staff was friendly, restaurant clean and well decorated. I liked that they have a live venue out back, looks like a fun place to watch a show.

I hate to write negative reviews about hard working local businesses but I just wanted to add my opinion here. Everyone was kind, the service was good. But the food, man, it just doesn’t live up to the VERY high price. The brisket wasn’t just decent, it was bad. I didn’t even choose to finish my small portion of it. The ribs were so-so. I had one side and it was fine. But a barbecue place needs to serve good brisket first and foremost, and unfortunately it was subpar. And the price, for one person, ordering a normal serving (1/4 lb of brisket, 2 ribs, and one side and a drink), was $40. That’s insanity.

Finally, I made it to Schoepf’s. They have good brisket and turkey breast. Unfortunately, it was late in the day, so they had sold out of pulled pork. Our sides were all tasty( potato salad, charro beans, and corn)
Shout out to the main cutting the meats. He was informative and courteous. Prices were higher than most places. Not sure we’ll return.

Fantastic and Friendly BBQ establishment. Had the 1/2 lb Beef Brisket – juicy, Mac and Cheese, potato salad, pickles, and home-made fountain drink. Spicy BBQ Sauce. More than enough food. Brisket and everything was great. Service was friendly and helpful. Plenty of available side options.

Group of 4 shared BBQ meats: Brisket ( both moist and lean), pork ribs, pulled pork, burned ends, and all 4 types of sausage. The 3 flavored sausages were only so-so, the rest of the meats were excellent at an expected price. We also had a number of sides: green beans, coleslaw, cucumber salad, and mac & cheese. The sides were all excellent but stupidly expensive priced…Lg=$20.99 (which was crazy for about $2-$3 of raw product). Next time we would get the meat to go and make our own sides at home.

Down from Iowa, late Wednesday 1:30pm lunch, zero line we were worried. we all got brisket. I got the last part of the point and smashed a 1/2 lb. Really enjoyed it, some of the best I’ve had. Will definitely be back next time I’m in town! Everyone enjoyed it and went home stuffed. I skipped dinner after flying home.
Side note: I appreciated how the sauces (the spicier is better, the normal is a tad sweet for me) work with the meat, not cover up the meat. Some real thought was put in there.
