Sato sushi is the best sushi outside of Japan or the pacific northwest. The homemade dumplings are the best you can find anywhere on earth. They offer a large sake selection. We love to bring family here when they are in town for a visit and like to celebrate special occasions here. Pictured hamachi jalapeño, halibut entree, homemade dumplings, and a selection of sushi rolls, including the green hornet and tiki tiki roll.

Enjoyed the old/new space. Sat at the bar & ordered a bunch of sushi. My favorite thing to do. Ran into some old friends and met some new ones. Realizing how much time has gone by since Sato first opened in that original space made me appreciate how the restaurant has sustained over the years and adapted to keep sushi in Edwards! I look forward to supporting them with my sushi addiction for many more years to come.

What started out as a seemingly positive experience, turned sour very quickly. Starters came out quickly, easily deceiving our large party of the service we’d end up getting. Luckily the appetizers we ordered were intended for our kids. The hot meals came roughly 30 mins after ordering. The sushi took 1 hour and 20 mins to show. By then our nigiri had a warmer touch to it than normal. All sushi, sashimi, nigiri, and rolls came out at the same time.
In my normal experience with sushi restaurants, the sashimi and nigiri are usually served as soon as they’re assembled as the taste changes significantly as the fish sits out. In my personal case, it sat out long enough to cause food poisoning. The salmon roe was days if not weeks old and should’ve never been served. In my haste, I popped one in my mouth and almost had an instant reaction to the acidity of the ikura. I ran to the restroom to vomit. The taste of the nigiri was masked by insanely sheer amounts of wasabi. Normally wasabi is supposed to accentuate the taste not over power it to hide the age of the fish.
For what was intended to be a final hurrah in Avon/Vail … turned out to be an experience of the ages and the first time I’ve ever been food poisoned at a sushi restaurant. Listen to all the 1 and 2 start reviews. It seems they only treat you well if you’re a local. I wouldn’t even pay gas station sushi prices for the quality we were served. It certainly wasn’t worth the absurd amount our party paid.
For a restaurant only open for 4 hours/day… the chef’s should be well prepared, the staff should’ve been attentive (they weren’t with us), and the quality should’ve been amazing (it wasn’t).

I am giving a star because Google offers nothing less. The food was utter crap, over priced, the manager is a total poser and the service was incompetent at best. I’ve had better sushi at an all you can eat conveyer belt in LA -this place is a Complete joke. If you want a beautiful meal for the same price please change your reservation to Matsuhisa, Yama, Hooked or Sakoba at the Ritz.

A goto when I’m skiing Beaver Creek. Have been going for nearly a decade. The dumplings are a must. All the rolls are excellent. A great gathering spot for our group of ski friends.
