Very good establishment and very respectful staffing and intelligent. Food was presented wonderfully and nice. I had trout cakes for appetizer and burger with side of mashed potatoes. I was very pleased and it’s pretty here and clean !

We went to Sapphire for a couples birthday dinner. With a reservation in advance we were seated immediately. Our driver was on a Monday night and the restaurant wasn’t very busy.

We ordered the Brisket Tacos for our appetizer. The corn tortillas with cheese grilled onto the outside are tasty. The brisket was shredded and moist without dripping. We both agreed the brisket needed something extra. Some kind of sauce, be out a smokey barbecue or a hot sauce would have definitely elevated them though!

We ordered the Lamb Shank Pot Pie (which is deconstructed but that’s not mentioned on the menu). The lamb was cooked perfectly. It was very tender and had good flavor. The “pot pie” was a flakey pastry served in decorative fashion with the lamb bone passing through it. The sauce in the dish was not the highlight. It had a base potato flavor to it, but seemed like it needed salt or something.

We also ordered the Hanger Steak. This was served medium rare as requested and was pre-sliced. It had a great char on the outside which contrasted well south the beefy soft interior of each slice. The Truffled Ruffles are essentially thinly sliced potato ribbons fried into potato chips. I’m neutral on these. Basically just potato chips. The dish was served with broccolini which was well cooked with a medium to strong minced garlic flavor. I’m a broccoli fan and consider broccolini to be “fake broccoli”, since it’s not actually broccoli. But this was some of the best broccolini I’ve had.

Overall our meal was very good. Not amazing. But good. Service was great though! Our waitress was attentive and very friendly. The atmosphere was quiet, well lit, and comfortable. It’s a very nice and clean space.

Unsure why the kitchen was unable to make an adjustment for an anaphylactic allergy. Clams swapped for seasoned vegetables, paying the original price, seemed like a reasonable request. Other than this hiccup, all food I tried was delicious! I look forward to returning to try their dinner menu! 10/10 for flavor and friendly service from the server.

My family has been to The Sapphire 3 times.

First time was absolutely amazing! Delicious food and above and beyond service, which made us come back a second time.

Second time was just as fabulous and matched the quality of food and service that we had the first visit.

The third time we went it was my mother’s birthday. The food was excellent and the service was absolutely awful. It ruined the whole entire meal. Kiley K was our server and needs to have more training. We had to ask for bread 3 times, did not deliver share plates with our mussels (there were four of us and two orders of mussels), had to ask her two times to open the bottle of wine we brought as we wanted to enjoy it with our entrees, and she asked us what we wanted for dessert and never gave us a dessert menu, so how would we know what we wanted for dessert.

For the price point of this restaurant I expect way better service. First two times we went we had excellent servers, Kiley K needs more training as she is not suitable for fine dining waitressing.

What amazing food!!
We shared a starter of dates that were bursting with savory flavor. I had the tenderloin and my husband had the trout. It was out of this world! The truffle sauce that was drizzled over the steak was perfect. The trout had a bit of a kick that my husband really enjoyed. And the chocolate cake with the raspberries was the delicious, rich but not overly so and the fruit was fresh and a refreshing complement to the oozy chocolate.
And the bartender we had (we sat at the bar) was very friendly and fun. We will definitely be back!

This evening, we had the pleasure of visiting a restaurant in Darby that we had not previously known about. Upon arrival, we noticed a significant number of cars, which led us to believe that it was a newly opened establishment. We decided to investigate further and were warmly welcomed by a courteous woman at the door. She explained that the restaurant was still in the process of testing its menu items for friends and family and was not yet officially open. However, she kindly offered to check if they could accommodate us, and upon her return, she invited us to sit and assured us that the management would be happy to serve us. The menu was truly exceptional, and the food we were served was outstanding. We were impressed by the restaurant’s gracious staff and exceptional cuisine. If you’re ever in Darby, MT, we highly recommend visiting Sapphire Restaurant.

This little gem is worth the trip to Darby. They feature creative menus for lunch and dinner. Priced at the higher end here in Montana, this is a fine choice for a memorable meal in a nice environment with terrific views. Our server, Wade, was attentive and knowledgeable but not pretentious.

We ordered the beef bone in short rib which was cooked and seasoned to perfection as was it’s accompanying Parmesan polenta. Our friend who doesn’t care for polenta didn’t leave a morsel as it was so good. I had the lamb shank pot pie. This humble dish was raised to a stunning and satisfying delicious meal. Both people who ordered the petite filet said theirs was spot on.
The dessert menu looked promising but we were satiated and had a performance to attend, so we’ll try their desserts next time.

We made a reservation and we’re seated immediately when we arrived.

If you’re looking for a special meal or have a special occasion, consider Saphire in Darby. Our next outing will be to try their lunch menu.

I love to explore new places and I am so glad our daughter suggested this one. I didn’t know what to expect because every nice restaurant in the bitterroot valley has not been what it’s hyped up to be. This place did not disappoint! The atmosphere when you walk in is almost a country club vibe but also a welcome to everyone vibe. We just came from a nice hike and were dressed as such. We were welcomed with the everyone is welcome here and we want everyone to feel it too. Loved it. Our food was very good to say the least. I’m a very picky person when you post pics of fine dining…. I want the Pic on my plate if you know what I mean. My son ordered the lamb and it just fell off the bone. The flavor was perfectly even with just a hint of game to let you know what your eating and a beautiful rounded seasoning throughout the rest. I ordered a ribeye to see if this place could cook one the way I want it and not destroy it with seasonings. First time I have ever got my steak perfectly med-rare… the only way in my opinion to eat a steak. The red wine reduction drizzled on it was perfect.

All in all, appetizers and meals were great! The only thing I would have them change is the ice quantity in the drink. I asked for light ice and apparently they only do a full glass of ice. Drink was still good though. I highly recommend this restaurant to anyone in the area, even if you just got done hiking. Good people, good vibes, personable. Thank you for tge experience! I will be back!

Wow!!!! Wish we could give 10 stars ⭐️. What a special restaurant and a huge gift to the beautiful town of Darby Montana! We had the pleasure of having dinner there recently and were blown away. The building, atmosphere, staff and food were outstanding! We just made reservations to bring some family there next Friday and cannot wait to share this gem with them! Don’t hesitate!
