Long time customer love the chile, beans, and carnitas… but the pico de gallo has suddenly been terrible a few times now; like a bowl of cilantro with a couple specs of tomato and onion in it, inedible. Would recommend improving this recipe.

This is an awful place to eat. Everything was overcooked and almost to crunchy to bite some of it. Extremely noisy. Waitress gave 2 tables the incorrect credit cards, charged them wrong. We ordered sopapillas. We waited about 15 minutes and never got them. Decided to leave and make sure they weren’t on the check. Long story short she said they will be up in a minute. She was going to make them to go free of charge as they were just going to throw them away. We said okay. I went and got the car and it was still another 10 min. Opened the box at home and they were crispy fried with no dough inside at all. I mean I get they were supposed to be hollow but these disintegrated in your fingers when you picked them up. Also, I had Chile Rellenos and they were cut up pieces of a little bit of a chile with some cheese wrapped around something. Im not sure what the actual wrap was because it was partly burnt. Very long story….go to taco bell for non traditional Mexican food. Lol . No queso either.

Never have any issues with the chips guac and salsa I order but the few times I’ve gotten a naked burrito for a GLUTEN ALLERGY I still get it on the tortilla. Even today said it was for an allergy, trusted the person in the drive thru, saw the container and assumed it was good and I opened it to two foil wrapped BURRITOS. My trash is gonna be happily fed today!

We visit several different Santiago’s locations pretty frequently — Golden has always been our favorite. But tonight, we stopped at the Castle Rock location on our way home from Texas, and it was hands-down the best experience we’ve ever had at a Santiago’s!

The food was absolutely amazing, the staff was friendly and attentive, and the service was top-notch. Everything about our visit was just perfect. The only downside is that we don’t live closer to this location!

Great job, Santiago’s Castle Rock team — you’ve set the bar high!

Living in Denver for over 20 years Santiago’s has been a staple for quick Mexican food. My recent visit has nothing to do with the staff. The staff was welcoming and friendly.
The burrito on the other hand.
I had a breakfast burrito with the meat of the day. It was worst than “Where is Waldo” finding the meat. Don’t know what the meat was. Second, it had zero flavor. The look was there. It just didn’t taste like anything. The green chile and chicharrón were lacking any resemblance of pork. Overall they need to overhaul the cooks or revamp the recipe. I would say they are a pass.

Grab & Go Breakfast Burritos anyone? A popular breakfast spot. Skip the other fast food places, especially for breakfast. A very busy drive thru. Everyone comes here for their hearty burritos. I always eat breakfast on the run. I used to go to the McDonald’s drive thru around the corner for breakfast. Their burritos are disgusting, and they are so small, they fit in the palm of my hand. Small mom & pop restaurants like Santiago’s rule.

I drove over an hour from out of town because I use to love Santiago’s green chilli, but I was greatly disappointed. I was given cold burnt chilli cheese fries, so gross that we couldn’t eat them. The chilli relleno was not battered, it had egg poured over it like a scrambled egg, also overcooked. The once delicious and spicy green chilli was not spicy, not what it use to be. The side of rice and beans was literally a tablespoon of each. The tortillas were cold and not wrapped in aluminum foil or anything. It was so sad and disappointing. The servers were nice to us, although one was very rude to an older gentleman about his order, another staff member came over and helped that situation though.

Half and half green chili is to die for! Staff was awesome! Had to wait 15 minutes for our steak deluxe burritos- which was great because it came out SO hot and fresh!

This location is always consistent with breakfast burritos!! This is the only location where the burritos are never soggy & you can actually taste the meat! This location like most gets slammed but they do a great job working through it.
