I drove over an hour from out of town because I use to love Santiago’s green chilli, but I was greatly disappointed. I was given cold burnt chilli cheese fries, so gross that we couldn’t eat them. The chilli relleno was not battered, it had egg poured over it like a scrambled egg, also overcooked. The once delicious and spicy green chilli was not spicy, not what it use to be. The side of rice and beans was literally a tablespoon of each. The tortillas were cold and not wrapped in aluminum foil or anything. It was so sad and disappointing. The servers were nice to us, although one was very rude to an older gentleman about his order, another staff member came over and helped that situation though.

We grew up on Santiago’s. So I know how good this place was and really still could be. But it’s like they don’t even care anymore. We were at the Castle Rock location this past week. This location has really struggled for quite a while. When we arrived we saw that an entire seating section was blocked off. Okay no big deal. So we chose a table on the side of the restaurant that was open along with everyone else. After the waitress noticed us sitting there a few minutes she came by and said “oh you guys need to order at the counter”. Uh okay. Do they not come take your order anymore at your table? So we went to the counter. We ordered what we wanted and at the end I added a crispy relleno on the side with no chili. He charged me for the entire relleno plate. Uhhhhh. So instead of making him take it off my card I told him to not worry about it. I should have made him take it off. We go sit back down. We then hear the waitress telling the guy at the counter that she blocked an entire section of tables so she doesn’t have to clean them the rest of night. It was 5:00 pm. Must be tough taking orders and wiping tables down when you’re a waitress. Food came out. Sooooo disappointed. Here’s a picture of the $11.50 relleno plate I didn’t want. It’s the size of a child’s meal. We actually laughed about it. Plus the cost of the other items I did want. Seriously…come on. Everything was off temperature…definitely not hot enough. Prayed we wouldn’t get sick. The cheese in the relleno was cold and still in it’s solid form. Oil used to fry the rellenos tasted rancid. Left most of the food on the plate. You know, I get some restaurants are struggling to find good employees. But where’s the owner in all of this? I’m sad for Santiago’s. Your green chili is the only thing keeping you float. We won’t be back.

I’ve been coming to this place for years and I still just love it. Their food is consistently good, homestyle, southwestern food. Their green chile could use slightly more heat, but overall wonderful. I always get some variation of deluxe burrito, as I love all the chopped lettuce and tomato they cover the dish with.

This was my first time at this Santiago’s. The others are solid, so I figured this one would be as well. I wasn’t let down. Great food, great service and decent prices. You really can’t go wrong. It was a little bit fast foodish inside, but they are essentially serving food fast. I will go again when I drive by Castle Rock.

The drive thru line in the morning is long for a reason. Their breakfast burritos are top notch. They’re not kidding, either, about the hot sauce – it is hot, hot, hot! But not so hot that the flavor is drowned out. Rather, if you like it spicy, then go for it. You won’t be disappointed. Yummmy stuff here.

We were so disappointed. It’s definitely not what it use to be. The chili isn’t spicy anymore, it’s not the same delicious green chili it use to be. I drove up with the family from over an hour away, craving Chilli cheese fries…. I got cold burned fries and non spicy chill. The servers were nice though. Do they use canned pork now?

i have eaten Santiagos for years, i used to go to the Denver location on holly and leetsdale but moved down south and so came here today to get my favorite burrito. i dont know if the recipe changed or if the staff are just too busy or just dont know what they are doing, or maybe running out of green chili?? it was 8am so id hope they werent running out already. they put the egg and meat in the tortilla and barely drizzled some green chili on top. it was the dryest blandest burrito ive ever had at any green chili burrito place in colorado. the ratio was 95% egg and bacon and 5% green chili. it was the most disappointing Santiago burrito of my life. normally the egg and meat mixture is part of a soupy wet green chili mix, extremely wet and primarily compromised of green chili. but at least today at this location it was the exact opposite ratio / mixture. i will never come back to this Santiagos again if this is the norm, this is not a Santiago breakfast burrito… the counter staff taking orders were extremely friendly and hard working. but the food was just not what i have grown to love for many years up in denver.

Not a bad place at all if you are into Mexican burritos. The customer staff and service was excellent, the food preparation was surprisingly quick, the family was well maintained, and the location was centrally located in Castle Rock. I highly encourage others to come visit.
