Our experience at Sant Ambroeus Aspen was truly exceptional. We had dinner there on Monday, and everything—from the warm, inviting atmosphere to the beautifully crafted dishes—immediately impressed us. The food was amazing, the ambiance was perfect, and the service elevated the entire evening.
We loved it so much that we called to come back on Tuesday, only to find out they were closed—otherwise, we absolutely would have gone three nights in a row. Instead, we booked again for Wednesday, and once again the experience exceeded expectations. A special thank-you to Eduardo, the manager, whose incredible service, gracious hospitality, and attention to detail made both visits unforgettable.
There was truly something for everyone in our family, including the kids, and every dish was enjoyed with enthusiasm. Sant Ambroeus Aspen is one of those rare places that gets everything right—food, atmosphere, and service. This is an absolute must for anyone visiting Aspen.

We’ve been to the Sant Ambroeus in Manhattan, so of course we had to stop at their new Aspen location while we were driving through. The entire experience was wonderful. The salmon tartare was balanced with fresh herbs, sweet radishes, and creamy avocado. We were so excited to dig in we did not take a photo! I could truly eat it every day. My Paccheri Rosa was perfectly balanced in all ways, as was my partner’s Fettuccine alla Bolonese, which he loaded with extra Parmesan.
The dessert is not to be left out – we wrapped up the meal with the Tiramisu – which was absolutely divine and a must try if you visit.
As always with Sant Ambroeus, the service was impeccable and the entire experience took us straight to Italy. We cannot wait to return the next time we are in Aspen, or New York City.

We had dinner last night at Sant Ambroues and we had a very beautiful waitress serving us. If I am not mistaken, her name is Anka.
She was extremely professional. Her cocktails and food recommendations were perfect: we enjoyed the Talk to Talk and Riviera, followed by an excellent red wine. The food was outstanding: Vitelli tonnato, black truffle pizza, chicken paillard and Dover sole. And we finished our meal with tiramisu ! Our waitress’s attentive service truly elevated our dinner. A remarkable evening, and a restaurant we recommend most highly.

Sant Ambroeus offers hyper-traditional American-Italian, as you would have received in 1993 at an upscale NY Italian restaurant. They definitely hit that note; whether or not that’s a note worth aiming for is debatable. Personally, I found the food pretty bland and forgettable – if you like safe, easy eats, you may well be delighted.
Sadly, service is straight from the nineties too – the waitress distinctly turned her nose up at a request for tap water and the fact that our table wasn’t interested in drinking heavily. Guys, it’s 2026 – even rich people are okay with tap water, and have you ever heard of dry January? Sadly, the restaurant will always find a way to extract margin – $16 for two teabags is *insane*.
Atmosphere was fine – interiors are nice, quiet and well lit, but there’s a cultivated stuffiness that may or may not hit, depending on what you’re going for.
All in all – mid. Two people ordering apps, entrees, one glass of wine, two teas and no dessert came to just south of $300 after tax and tip. There’s just better places to spend that.

We had the best experience at this restaurant. The food was delicious, but what really stood out was the outstanding service and kindness of the staff absolutely incredible! Mariano was an amazing server who made the experience even more enjoyable, and the manager was excellent with us: friendly, attentive, and very welcoming.

Amazing dinner in a beautifully designed space. Shoutout to our waiter Mariano, who made our experience absolutely fantastic. But of course the food stole the show. Every dish was extraordinary. We had the Vitello Tonnato, the truffle pizza, Paccheri Rosa, Ossobuco Gnocchi and the Ravioli. And of course can’t forget the most decadent Tiramizú. Absolutely sublime experience.
