At SALT, our passionate commitment to sustainability inspires everything we do. We source quality ingredients from local farms and believe the shortest distance from the farm to the table is best. We only serve grass-finished beef, GMO-free chicken, and pork, and we purchase organic Wisdom Farm eggs from Haxtun, Colorado. By sourcing locally, we know where our produce comes from and the person who grew it. Not only does this showcase what farmers in Colorado do so well, but it gives our guests the opportunity to support their neighbors and friends. Our food bridges the gap between healthy, delicious, and sustainable, creating a unique experience for our guests.

I had the blackberry spritz sub gin. It was good but a bit too sweet imo. I was pleased to see they had three French whites on the glass wine offerings. French whites tend to be my fave whites so I ordered a glass of Charme de Loire—it went perfectly with the halibut and simple salad we shared. The halibut was very good, but I do feel it was a tad overdone—a shame as I love halibut. But the sides and sauce that came with it were excellent and perfectly cooked. I felt it was a tad on the heavy side for summer, so I was glad we also ordered a simple salad to go with it. The simple salad was indeed simple but it was 10/10, so good. And went perfectly with the fish and wine.
My H enjoyed the blueberry mocktail too. We skipped dessert.
Overall a good experience. I’d happily come back.
It was just kinda odd.
It was incredible –
Beet salad, mahi mahi and a wagu steak with a bottle of Valpolicella and Tiramisu
It’s been a couple of years since my wife and I had been there and it’s our new favorite restaurant in Boulder.
It was an amazing experience.
Bravo!
Brad was wonderful to work with while ironing out all of the details and made the planning process feel seamless. We also truly appreciated how accommodating the team was — we had a vegan attendee, and they were able to thoughtfully tweak the first course to meet their needs without issue.
During the event, Forrest and Holden were fantastic servers and made sure everyone’s glasses were always full, which our guests definitely noticed and appreciated.
Everything ran smoothly from start to finish, and we received nothing but wonderful feedback from our group. We can’t wait to go back again and would highly recommend SALT to anyone looking for a beautiful space and an exceptional experience!
Annabelle made some strong recommendations including the salmon which was incredible.
We started with the palisade peach salad because we heard about palisade peaches and had to try them. There’s a lot going on with the salad.
My husband and I split the salmon and a tavern burger. The burger was fine but I’d try something more creative next time.
Wines by the glass were reasonably priced with good, global options.
We ended with the vegan carrot cake which we really liked. If chef added a little candied ginger to the plate, it would be exceptional.
We sat outside and enjoyed the people watching but the inside looked comfortable and fun.
