There are not many choices in Midland/Odessa for nice dining especially when looking for a place to take a customer or work colleagues. I am very happy that I found Saint Blaise as they hit all three of my marks for restaurants that I take customers to.

Food: The food was great. I wanted to get the steak and potatoes but it was $50+ which I thought was a bit steep for just steak and potatoes. I opted for the blackened salmon which was cooked perfectly with delicious broccoli and mashed potatoes on the side that were also cooked perfectly. The gnocchi had a perfect consistency with a non-overwhelming sauce so also phenomenally done. The two drinks I got: Same Place and Maple Manhattan were well-made with each component complementing each other well and not overpowering one another. If you like tequila and manhattans I think you will be happy.

Service: The servers were very attentive and made sure we were taken care of the entire visit especially with the waters. Huge kudos!

Ambiance: I will say because the inside space is a bit tight and small, having conversation when the restaurant was busy proved a bit difficult but if that is the case they do have seating right outside in the lobby area and having conversations there should not be an issue.

I will make sure to be back with customers here!

From start to finish, this was one of the best experiences we have ever had. The oysters are insanely good. The French onion soup was even a better touch and both steaks that we are having are truly epic. I personally want to thank Raymundo and Karina For their exceptional service and their lovely attitude. This has been an absolutely wonderful evening.

Staff: friendly and best customer service Ive seen in Midland as for a restaurant.

Environment: Clean and neat.

Had such a lovely time at Saint Blaise, totally worth the wait. Our server was the sweetest, the tomato soup was top tier, perfect for the cold weather that’s approaching!! The food is very fair priced and every bite was delicious!
i also had the pistachio martini, they even added a shot of espresso to mine since i couldn’t choose between the pistachio or espresso martini, they said why not both! I will say best martini i’ve ever had, i raved about it for days!
The atmosphere, food and crew simply just 10/10. I can’t wait to go back and try more of the menu!!

We had an incredible dinner at Saint Blaise this past Friday night. We made a reservation and were seated immediately—no wait at all, which was a great start. Our waiter, Andy, was phenomenal. His service was attentive, friendly, and truly elevated our entire experience.

We started with the French onion dip and homemade chips—absolutely to die for! The chips were fresh, crispy, and addictive. I had the Salisbury steak, which was cooked perfectly and packed with flavor. My husband had the gnocchi, which was soft, rich, and full of a punch of flavor. Every dish hit the mark.

The drinks were crafted with care and tasted just as amazing as they looked. You could tell a lot of love went into them. Andy didn’t just stop at great service—he gave us top-tier recommendations for post-dinner drinks, which rounded out our evening perfectly.

Andy is a huge asset to the Saint Blaise team. We will definitely be coming back and will be recommending this spot to friends and family. A truly memorable date night!

The food was delicious! The Lobster Roll and Fries had great flavor! This was my first time trying them and they did not disappoint. Everything was fresh and it was not heavy. The restaurant was clean and the staff were great. I will definitely be returning!

We were so excited to try Saint Blaise again! We went back in March and didn’t have a good experience with the hostess and our reservation but I really wanted to try it again. We had reservations and were sat down as soon as we got there. Ryah greeted us with a smile and she was so nice from the moment we walked in until we left! She sat us down and was our waitress! She was so cute and friendly! We loved her! We started off with drinks! I ordered the 1934 cosmopolitan! Loved it. And my friends ordered the salted caramel espresso martini! That was also soooo good!
For appetizers we ordered pigs in blankets, beer cheese fondue, and bistro meatballs! For mains we ordered the steak gnocchi, Salisbury steak, and the blackened Salmon. For dessert we got the bread pudding and the apple fritters. Wowwwww! Loved everything. There wasn’t an appetizer, plate or dessert that we regretted! Everything was really really good! I can’t wait to try the brunch next!!!!!

From the moment we walked in, the atmosphere was warm, inviting, and elegantly designed. One of my favorite pieces was the green marble throughout the bar. The staff were knowledgeable, friendly, and genuinely passionate about ensuring we had a great experience. The food was nothing short of phenomenal. Every dish was beautifully presented and bursting with flavor. You could tell that top quality ingredients and careful preparation went into every bite. We decided to give this place a try after it was recommended by a friend. It did not disappoint. The restaurant is small and has a very intimate vibe. I’m pescatarian and there were plenty of options for me. I ordered the beer cheese fondue, the lobster roll, and bread pudding while my husband ordered the pigs in a blanket, New York strip, and apple fritters. All of the food was to die for and our server was very attentive. My only note was the steak was very expensive but that could be an issue with the current meat market. This place is a gem and we will be back!
